    Since I'm in the GMT+12 Timezone, it's dinner time here.. I've already got most of my daily allowance of veggie carbs since I had 2 small lunches and will have a small dinner - just wondering where I post my day's veggie carbs since I'm going to be the first? Cheers :3

      Just go ahead and post in this thread whenever you are ready. We have people from all parts of the globe participating in this challenge, so totals will be reported at lots of different times of the day and night. This is expected, and I'm ready to keep up with everything.

      This is a good time for me to remind everyone that you are required to report your daily net veggie carb totals in this thread. Having said that, I am aware that we are all on different schedules, and realize that it may not be possible for everyone to report at the end of each day. As long as I end up with a total for each day, it is perfectly acceptable to report them the next day. The challenge goes on through Friday... I will be finalizing my tallies on Saturday, and giving awards out on Sunday. So as long as I know your daily numbers by sometime on Saturday, you will be fine. I try to be easy to work with.

        Well, I have my 'new' veggie for the week. I drove to the largest local supermarket to see what I could find, as our local shops don't have a huge range. I ended up with two 'mooli.' I bought one once before years ago, but it languished at the back of the fridge until it could practically slide out by itself... this time I'll actually get round to using it! Anyone have any recipe ideas? I'll probably use some raw with salad, and some cooked ... somehow.

        I'm off to 'google' ' 'dhudi,' tindori, and taturi - other veg they had, but I didn't dare buy them 'til I knew if they were going to be OK for me on this rung!

            Morning all, I'm on day 2 now so here are my results from day 1. I do weigh everything and throw it on fitday to get the net carbs, so that's what I'm posting here.
            Breakfast
            60gm Mushrooms - 1.4gm
            55gm Onions - 4.1gm
            Lunch (This was two light meals)
            Homemade Penang Curry with onions & peppers - 5.4gm
            1 cup mixed greens - 0.8gm
            60gm cucumber - 1.9gm
            42gm green capsicum - 1.2gm
            Dinner
            Spicy Burgers w/ onions - 2.6gm
            1 cup mixed greens - 0.8gm
            30gm cucumber 1.0gm
            40gm green capsicum - 1.2gm
            DAY'S TOTAL - 20.4gm

              27 veggie net carbs today and I also tried a new veggie.

              For breakfast I had an omelette with spinach and garlic. Then for lunch I had steamed salmon with green beans and grilled tomatoes. Dinner was white asparagus soup and red bell pepper stuffed with chicken salad. I also snacked on some tomato chips.

              This is the recipe I used for the soup: Cream Of Asparagus Soup (crème D'asperges) Recipe at Epicurious.com
              I didn't have onions, so I used shallots instead.

                I have no idea how I'm going to get to 12 carbs in veggies with the whole 2 cups of salad veggies, 1 cup other x_x So far I had half a cup of pumpkin and half a cup of cauliflower for like... 6 carbs I guess. I'll have two cups of salad for my dinner tonight and that's... not anywhere close to 12. I bought some jicama to try... not impressed. Tastes sort of like a radish with just a hint of carrot like sweetness XP I want to use my 2 cups for the actual salad leaves.

                What high carb veggies am I ignorant of that will get me to the magic number?

                  1 cup of red pepper is 6 net carbs.

                  So if you want to have some leafy vegetables, you can mix them with peppers and cucumbers to make a salad.

                    Ok, got my veggies in today (15.2 net carbs). Cucumber, kimchi (cabbage), baby romaine lettuce, and red peppers.

                      Hi all,

                      Net carbs for me today (Monday 4th) = 25

                      I've had cherry toms, onion, mixed salad leaves, radishes, turnip (mashed with cream, butter, s&p and used as a 'cottage pie' topping over some mince) sweetheart cabbage and rhubarb.

                      Georgiana - if you read this - what was the white asparagus like? I saw some in a jar a few weeks ago and was thinking I might try it at some time.

                        I guess I could eat smaller salads and just throw a variety of veggies in them. No more meal sized salads but I guess I'll just have to eat more meat to balance it. I honestly forget salads can have things in them other than lettuce. I like plain foods x_x

                          Niko there are plenty of high carb veggies. You may want to invest in a carbohydrate gram counter~~they are quite handy.

                          green beans 1/2 cup~~~2.9 net carbs
                          yellow beans 1/2 cup~~~2.9 net carbs
                          steamed broccoli 1/2 cup~~~2.2 net carbs
                          steamed broccolini 1/2 cup~~~6.7 net carbs
                          steamed kohlrabi 1/2 cup~~~4.6 net carbs
                          portabella mushroom 4 oz~~~4.1
                          red pepper 1/2 cup~~~3.3 net carbs
                          boiled rutabaga 1/2 cup~~~5.9
                          spaghetti squash 1/2 cup~~~ 3.9 net carbs
                          tomato 3 oz~~~3.2 carbs
                          boiled turnip 1/2 cup~~~2.3 net carbs
                          waterchestnuts 1/2 cup~~~7 net carbs

                            Here's mine for today....I'm just making my dinner now (spaghetti squash while the other have that sad wheat substitute

                            My veggies for today were:

                            10 asparagus spears 4.7
                            1 cup cuke with peel on 2.6
                            1 green onion 1.1
                            1.5 cups spaghetti squash 15.1
                            1/2 cup tomato 3.2

                            Total Carbs from veggies - 27
                            subtract fiber 8.1
                            Total net carbs = 18.9

                              Radishes, 1 cup slices 4
                              Cabbage, fresh, 1 cup, chopped 5
                              Mushrooms, fresh, 0.5 cup, pieces or slices 1
                              Zucchini, 0.5 cup, sliced 4
                              Green Beans (snap), 1 cup 8
                              Onions, raw, 0.25 cup, chopped 3
                              Diced tomatoes & Green Chilis Rotel, 1 serving 4
                              Romaine, 1 cup (acutally half raddichio) 1
                              TOTALS: 30
                              30 total carbs, deduct 11 fiber carbs, 19 net carbs for today

                                I had 1 c mixed salad, 1 c spaghetti squash, 4.8, 6 oz cauliflower, 6 brussels sprouts 7.3 -- total 20.9

                                I also had other things - this are just my vegetable totals.
