    Hi CP, we also use rhubarb. I hope my daughter's patch is big enough for both of us! I stewed some frozen rhubarb yesterday, then added a package of strawberry Jello Light. I let it set in the fridge then served it with whipped cream. Nice change for breakfast. (there are no carbs in the Jello Light) Today I was giving my men pumpkin smoothies for breakfast. I use whipping cream thinned with water, an egg, spices, splenda & 1/2 cup pumpkin. Yummy!

      Yummmm - pumpkin... I'm growing some this year, as I am struggling to find it over here. There will be loads in October for Hallowe'en of course, but at the moment I can't even find it canned! Boo-hoo.

      Anyway, my figures for today....

      Lunchtime I had a ham salad with mixed salad leaves and rocket (arugula), tomatoes, cucumber, sweet pepper, radishes, home-made coleslaw with cabbage, onion and orange pepper.

      This evening - sea-food night - mussels in garlic lemon mayo on more salad leaves, alfafa sprouts, toms, and cucumber, followed by garlic/chilli/lemongrass prawn stir-fry with daikon, cabbage, peppers, courgette (zucchini) onion and mushrooms.

      Tried my new veggie - daikon/mooli - very tasty - kept a nice 'bite' to the texture when stir fried. I still have one left, so will probably try the fried daikon/mooli chips posted by Mitzi.

      Total net carbs = 23. A bit afternoon/evening heavy on veggie carbs, as I had a mock danish for breakfast with no veg, but I will do better tomorrow Miss, and have veggies at all three meals!

        Is rhubarb a veggie? I've always used it like a fruit.

          It is used more like a fruit - but it's on the 'other veggie' list, and apparently, technically it is classified as a veggie because it is the stem that is used.

          Rhubarb Background - all you ever wanted to know about rhubarb, and probably a lot you didn't!

              Today for my veggies I had:

              1.25 cup spaghetti squash 12.6
              9.7 oz of zucchini 8.6
              2 cups of unpeeled cukes 6.1

              Total carbs 27.3
              minus fiber 7.7
              Net carbs = 19.6 (if my math is right?)

              OKAY, I always thought I did really well with veggies, I love them, eat them at every meal, snack on them....but I am having another snack of cukes tonight to get them in! So I am really glad I joined this challenge - its opened my eyes that I could do even better with my veggies So thank you Mitzimarie

                Tuesday OWL Veggies-
                6 large mushrooms
                2 cups mixed salad greens
                2 thin sliced mature onion
                1 medium artichoke
                1/2 avacado (fruit)?
                9 slices cucumber
                Yields: 31.3 Carbs~17.7 Net Carbs

                I counted my 1/2 avacado as a veggie even though it is recognized as a fruit. It's on the Special Catagory Food. I figure i'm close enough on the net carbs today, even if it can't be counted.

                  Suzanne, this is what I do to enter a completed recipe into Fitday: go to a day that has no other food entered (you can go into the next day's log). Enter all of the ingredients, and write down the total number of calories, fat, carbs, fiber, and protein on paper. You can then delete those foods, so you can go back to having a clean slate for that day. Next, go into custom foods and create a new food using the information you wrote down. It really does save a lot of time for me to be able to just click on "MUP" now, instead of having to enter the pumpkin, cream cheese, ground cinnamon, ground allspice, and almonds each time that I had it for breakfast.

                        Tuesday:

                        Onion, Yellow Pepper, homemade salsa, cauliflower, broccoli salad -- total 21.5.
                        I had broccoli and cauliflower twice today so that's why the total is higher than it would be for 1 serving each.

                        tomorrow is my new veggie day....hey Boonie, what did they call the wrinklie thing when you checked out at the store? It kinda reminded me of my 2nd husband...ROFLMAO!!!

                          Oh, I am so jealous of those who are growing veggies! I have always lived in houses with yards that were mostly shady, so was not able to grow veggies well. I've recently moved, and finally have a yard that gets some sun. I need to do a little research, and find out which veggies are easiest to grow in my area.

                          And don't you just love greek yogurt?!

                              You really couldn't have said it better - it is truly an eye-opener when you actually start accurately measuring and separating your net veggie carbs from your total carbs. I'd wager that most people are getting fewer net veggie carbs than they think they are. It took a very conscious effort on my part to meet my minimum on my first Veggie Challenge. I had just moved to Rung 1, and was just beginning to open my mind to veggies... I never ate them pre-Atkins, and always thought that I hated them. That first challenge literally changed my life. When I had the opportunity to run the challenge a year later, I jumped at the opportunity.

                              I am so glad that each of you decided to join this challenge. I *always* learn something, and I have been enjoying getting to know you better.

                                Oh, definitely! I always allow avocado to count towards veggie totals.

                                I found the following info on www.foodsubs.com (Cook's Thesaurus):

                                Vegetables is a catch-all category that includes many of the edible parts of a plant, like stems, roots, flowers, and leaves. We don't usually consider the fruits of a plant to be vegetables, except for fruits that aren't very sweet. Tomatoes, squash, peppers, eggplants, and beans, for example, are all fruits, but we usually refer to them as vegetables.
