      Is it as hard to get your kids to eat veggies, as it is mine? Honestly, my 13 year old son eats terribly... he not only won't eat veggies (or fruit, even!), but he complains non-stop about the smell of them when I eat them.

      Fennel - now this is a veggie that I have never tried! I'm glad to hear that you enjoyed it. I will definitely be trying it in the future.

      fennel = finocchio = Florence fennel =bulb fennel = garden fennel = sweet fennel = (incorrectly) sweet anise = (incorrectly) anise Equivalents: 1 cup sliced = 87 grams; 1 bulb = 2 1/2 cups Notes: Fennel tastes like licorice or anise, and it's commonly used in Italian dishes. It's very versatile; you can sauté it and add it to sauces, braise it as a side dish, or serve it raw as a crudité.

        My 14 year old DD doesn't eat any fruit except one serving of cranberry juice a day. She would however eat broccoli twice a day quite happily along with most other low carb veggies.
        My 11 year old DS loves all fruit and tolerates veggies. He is getting better - he still doesn't like zucchini noodles but he eats everything else without complaint. We only have Atkins friendly food for supper so they don't have much choice.

          Wow... I can't think of a single thing my son will do without complaint.

          OK, I'm still pondering what I'm going to have for dinner. Since it's after 7:00pm, you'd think I would have had that figured out by now.

          I do have a couple of beautiful portabella mushrooms that I will have at some point this week. Here are my two possibilites for that:

          Linda's Low Carb Menus & Recipes



          PORTOBELLO PARMESAN
          2 portobello mushroom caps
          Salt and pepper, to taste
          Pinch garlic powder
          2 tablespoons spaghetti sauce
          2 ounces mozzarella cheese, shredded, 1/2 cup
          1 ounce freshly grated parmesan cheese, 1/4 cup
          Fresh parsley, chopped, optional
          Very gently scrape the gills off the underside of the mushroom caps with a spoon and cut off the stems to make them level with the underside of the mushrooms. Brush the mushrooms with a damp cloth to clean them. Place the caps stem side up on a foil-lined baking sheet. Bake at 400º 10 minutes. Turn the caps stem side down and bake another 5 minutes.
          Place the mushrooms stem side up on the same baking sheet. Sprinkle them with salt, pepper and garlic powder. Spread each with 1 tablespoon of the spaghetti sauce. Divide the mozzarella and parmesan cheeses between the mushrooms. Bake at 400º about 5-7 minutes until the cheese is melted and bubbly. Garnish with chopped parsley, if desired. Serve as a meatless main dish or as a side dish.
          Makes 2 servings
          Do not freeze
          Per Serving: 198 Calories; 12g Fat; 15g Protein; 8g Carbohydrate; 2g Dietary Fiber; 6g Net Carbs
          This is based on a recipe by Giada De Laurentiis. She grilled her mushrooms and baked this more like a casserole with a lot more sauce. Since the sauce has so many carbs, I cut it back to just 1 tablespoon per mushroom and it was plenty. It's the cheese that's important here and there's plenty of it.

          Portabella Skins (don't have a picture for this one)

          (I understand that this is a wonderful alternative to potato skins. I'm going to add sour cream to mine. YUM!)

          INGREDIENTS:

          portabella mushrooms
          1 tablespoon olive oil
          1/4 teaspoon salt
          1/8 teaspoon pepper
          2/3 cup shredded cheddar cheese
          2 slices bacon, crisply cooked and crumbled
          1 small tomato, seeded and chopped
          1 tablespoon minced fresh chives or green onion

          DIRECTIONS:

          1. Preheat oven to 450 degrees. Line baking sheet with foil and spray lightly with cooking spray; set aside.

          2. Brush mushroom caps and edges with oil. Sprinkle stem-side with salt and pepper and place, rounded side down, on baking sheet.

          3. Divide cheese among mushroom caps and bake 10 minutes or until cheese begins to melt and edges begin to brown.

          4. Remove baking sheet from oven and sprinkle bacon, tomato and chives over mushrooms. Return baking sheet to oven and cook an additional 5 minutes, or until cheese is melted and mushrooms are hot.

          5. If desired, cut into wedges and serve with toothpicks

            17.6 net veggie carbs today. I've had broccoli, assorted lettuce, cuke, red pepper, celery, pumpkin & cabbage. Thank goodness for pumpkin having 4 carbs per 1/2 cup. I'm not very hungry today & had a hard time getting my #'s where they needed to be.

              Pumpkin is a GREAT food! In the half-can that I use each day in my MUP (which is .88 cups), there is a total of 15.8g carbs, and 8.8g fiber, for a total of 7g net carbs. Look at that fiber! LOL... I'm a fiber freak. It's almost like a game some days, to see just how much I can get. I've been able to reach the mid-50's range a few times.

                I got my carb veggies in today, but think I may have made a boo-boo !

                I had butternut squash - and I'm not sure I'm supposed to have it at this level (Rung 1). I was looking in my supermarket for pumpkin - which I guess they only carry in the fall, since I can't find it anywhere - and remembered reading somewhere that butternut squash is part of the pumpkin family, so I bought some, and, of course, ate it! Ah, well, live and learn.

                So, with the butternut squash, sauerkraut and cherry tomatoes today I wound up with 31 carbs, 4 fiber for a total of 27 net.

                If this squash was wrong, does that throw me out of the challenge? Hope not cause I am learning more about Atkins and veggies every day thanks to this challenge!

                  I had 18.9 vegetable carbs today.

                  green onion, yellow pepper (twice), cauliflower, celery, cucumber, fried radishes, mature onion, tossed salad and ta da da daaaaaaa....."fried apple" chayote. Linda's Low Carb Menus & Recipes Man oh man I LOVE THEM!!! Mom and I agree it's something we'll get again!

                    Both recipes look great Mitzi - which did you choose?

                    May 6th veggie carb count - 21.8

                    I tried fried radishes on Monday - and I liked them - but my head felt like they should taste like fried leftover red skinned new potatoes - and they didn't

                    Today I steamed them for 12 minutes and then chilled them in the fridge. I sliced them and fried the cold radishes with bacon and green onion. It was good, nothing like potatoes, and I don't know if the extra step was worth it. I think I will definitely toss them in olive oil and put them in a pan with turnips, onions and a roast.

                    I didn't think it would be as hard as it is to get my veggie carb count as high as it is - and I thought I was eating enough veggies before the challenge.

                    Pumpkin and spaghetti squash are definitely on the menu tomorrow.

                      Hi Carole
                      I saw the Chayote squash at the store but they were expensive, and I already had a $ 4 bulb of fennel in my cart - The ones I saw had deep grooves in them - I am curious how you peeled them.
                      I am also a little leary because apple pie and apple crisp would be pretty close to the top of my list of things I like to eat best - would it be a good replacement or would it make me want the real thing?

                        Absolutely not! If one was going to eat a higher rung food before it's time, I certainly don't have a problem with it being a veggie!

                        Pumpkin - I use the canned pumpkin by Libby's. It's usually on the same aisle as the cake mixes, baking stuff. Just make sure to pick up the 100% pumpkin and not the pumpkin pie filling (which has sugar). You have to look close, because in a lot of stores they put these 2 right next to each other on the same shelf, and their labels look a lot alike.

                          Oh, I've looked LOL! I wanted to make your MUP!

                          There are 4 stores in my area, WalMart, Safeway, Food City and a small IGA. I've looked in all of them! I live 8 miles from the Mexican border and the store food choices are influenced by that. Nogales, AZ USA has about 27,000 (I live north of Nogales in Rio Rico) and Nogales, Senora, Mexico has about 200,000 people! So the economy is pretty much dependent upon the likes and dislikes of our southern neighbors!

                          By the way (and I'm sure you never tire of hearing this) you look fabulous!

                            zucchini, 1 3.3 net
                            red pepper strips, one whole pepper 3.3 net
                            1/2 onion, 4 net

                            The above was all sauteed together with garlic.. pretty good too, filling

                            One cup broccoli, 4 net
                            cup romaine, .5 net
                            1 cuke, 4 net

                            19 net carbs from veggies... and a few more from strawberries lol!

                              You don't peel chayote, completely unnecessary, the peel is quite tender. I personally don't think it will make you crave apples, it is a satisfying alternative... and it is so good in soups too.

                                Alas, my veggies must be boring due to having a stomach bug all day. Could not keep anything even aspirin down until 8pm - but still got in the carbs for this with a pot of cabbage and onion soup with butter, salt & pepper. Roughly 3 cups has 24.8 g carbs of which 4.9 is fiber, so now all I need to do is manage some burger & shirataki that didn't work for me earlier.
