    This is our 3rd consecutive garden this year. Last year we had too many tomato plants so I backed off and only bought 4 this year. We also have green beans and wax beans, green onions, cucumbers and this year we are trying 2 new vegetables - broccoli and cabbage. I'll let you know how they do!

    This picture was taken a few weeks ago when the garden was first planted....things are really starting to grow now.



    I have the hardest time trying to grow anything other than when I have this year - my cucumbers 2 years ago looked like baseball bats - some were over 2 foot long...they got wrapped around the tomato plants and I couldn't find them until they grew too much - then they were too long and had no flavor.

      I started today with my new way of eating - pumpkin MVP from Mitzimarie's last Veggie Challenge.
      I also ate red peppers, cucumber, cauliflower and asparagus for a total of 22.2 net carbs.

        18 net veggies today. My favorite today was roasted asparagus!

          i finished my day off with a baked sweet potato so it really shot my number up.

          a total of 50 net carbs for monday.

              Net carbs today were 18 but I'm STUFFED. Lotsa fiber in what I ate today and I don't think I can take another bite! Mushrooms, tomato, green onions, pumpkin and broc.

                      I made my 12 grams of net carbs today!!! Broccoli, Cauliflower, mushrooms and bell peppers -- Snacked on raw veggies all day long...... It was a challenge!

                        Way to go, Monica! Yep, it really takes some focus to get that minimum each day. Good job

                        OK, time for my stuff. As you may have seen in an earlier post, I had grand plans yesterday (Sunday) to make some things to have ready for today. Well... I ended up spending more time doing other things, and I didn't get to make the roasted vegetable frittata that I posted about, so I had to eat something different for breakfast this morning. Thankfully, I still have about 8 cans of pumpkin left so I was able to eat some of that.

                        Here are my details: (remember, details are not required. I just like doing it )

                        .88 cups pumpkin ---> 7g net
                        150g orange bellpepper ---> 9g net
                        1 serving of sugar snap peas ---> 5g net
                        Salad with Romain, red cabbage, carrots ---> 3g net

                        Other Nutrition Facts from the veggies:
                        195 calories
                        1.5g Fat
                        8.2g Protein

                        I'm recording veggies only into my Fitday this week, so it is quicker/easier for me to keep track of.

                              Yes - quite the eye-opener, isn't it? That's one of the good things about this challenge. You will be able to see how other people are doing it, and pick up some tips and recipes for getting them in.

                              One thing you will learn with experience, is which veggies pack the most nutrition. And luckily, some of the veggies that pack the most nutrition are some of the ones that are lower in carbs. And if you choose the right ones, you can easily hit your daily target. For example, if you are in Induction, here is an example of how to get in the 12g minimum for the challenge:

                              150g orange bellpepper (1 cup) = 9g net carbs (I love to cut these into strips, and eat them raw) This counts as 1 of your cups of Salad Vegetables.

                              130g jicama (1 cup) = 5.1g net carbs (I also eat this raw) This counts as another cup of Salad Vegetables

                              1 cup fresh green beans = 4.1g net carbs (This is an "Other" Vegetable)

                              So, those 3 cups of vegetables tally up for a total of 18.2g net veggie carbs. That's more than enough! When you move to OWL, you add 5g net carbs of non-starchy veggies. So it's really not that difficult to get in your minimum, if you make good choices.

                                Just finished my calculations for today 13.5 net veggie carbs
                                mushrooms, green onions, broccoli, green beans and 1/2 avocado.
