I think it depends how you fill your gas. In my area there are places where you can pay first at the cashier/clerk or you pay at the pump (with a credit card or debit card). Anyhow if you pay by cash, you tell the cashier "I want $10". They dial in the $10 worth of gas for your pump. If you use only $9.00, then you get change back.
If you pay at the pump with a credit or debit card, then gallon and money meter will run until your tank is full (it will stop due to an auto-stop safety feature) or until you release the handle.
Changing oil: Daddy taught us how to do that and other car things like changing tires. But in cars built after 1995, it's hard to do because those cars are computerized. So whenever you have the car serviced, they reset the computer in the car, so those pesky "check oil soon" indicators don't flash inappropriately.
