  • Anything Almond Flour...

    I just picked up almond flour at a sweeeeet price. (It's been $9.99 a lb and I found it for $1.99 lb, same brand) And I bought 2 lbs. As most know I will be internetless for a little bit cause of the move. But I will have a new kitchen to get set up and a different older electric stove to figure out it's oddities. (i.e. the oven temp, which burners lean to which side, which burners burn hot, etc.) I am hoping to get a quick collection of recipes using my almond flour. It can be sweet or savory, or heck, both!
    I made up a recipe for peanut butter cookies with it last night that was sooo good! So I'll start the thread with it. I also wrote down the 1/2 parm and 1/2 almond flour batter for chicken and cheese from the other thread. I may use that today! It looked soooo good!

    Peanut Butter Cookies

    1 cup Peanut Butter
    1 cup Almond Flour
    1 cup pourable splenda
    1/4 cup ground flax
    2 eggs
    1 tsp vanilla

    Mix well, roll into 1 1/2 balls and place on greased cookie sheet or non- sptick cookie sheet. Use a fork to press cookies down to a little over 1/4 inch thickness. Bake at 350 for 10-12 minutes. Don't eat too many!! Serve with strong coffee! Makes about 24 cookies.

    These are the first Peanut butter cookies I have been able to make that weren't soooo fragile.
    Okay, now, dig out those recipes and help an ADBB girl out! Bring on the recipes!!

    Here are a few:

    Doughnut MuffinsThese muffins are meant to taste like doughnuts and I think they do a good job. There's even a version with buttermilk. This is one of the few recipes for which I use the powdered Splenda (for the topping). You don't end up using much per muffin, but you need enough to dip. Save the rest for cinnamon toast made with flax meal bread.

    INGREDIENTS:
    • 1 cup flax meal
    • 1 cup almond meal
    • 1 T baking powder
    • 1/4 t salt
    • 1 and 1/4 t nutmeg
    • 1 t cinammon
    • Artifiical sweetener - 1 cup "sweetening power" - zero carb (such as liquid) preferred
    • 1/2 cup (I stick) butter, melted
    • 4 eggs, beaten
    • 1/2 cup plus 2 T water
    • 1/2 cup powdered Splenda
    • 2 t cinnamon
    • 2 T melted butter
    PREPARATION:

    Preheat oven to 350 F. Butter muffin pans (makes 12 "regular" sized muffins)

    1. Mix dry ingredients well.

    2. Add eggs, melted butter, water, and liquid sweetener (if that's what you're using).

    Mix well.

    3. Fill muffin cups a bit over half way.

    4. Bake for about 20 minutes, until the tops are golden brown.

    5. Cool until you can handle them, then dip the tops in the melted butter followed by the Splenda/cinammon mixture.

    Each muffin has 1.5 gram effective carbohydrate plus 4 grams fiber. (This is assuming half a gram of carb for the topping.)

    Buttermilk Version: Switch out 1/2 cup buttermilk for that much of the water. Substitute 1 teaspoon baking soda and 1 teaspoon baking powder for the baking powder in the regular recipe. This adds half a gram of carb to each muffin

    I just put a batch of these in the oven, and thought I would share. I ran this through fitday.com, and I got 2 net carbs per muffin. I will let you guys know how they turned out. I used Davinchi French Vanilla to sweeten them.






    Classic Almond Flour Pound Cake
    Ingredients:
    • 1/2 cup butter (1 stick) softened at room temperature
    • 1/2 cup full fat cream cheese
    • 1 cup Splenda
    • 5 large eggs, at room temperature
    • 2 cups almond flour
    • 1 teaspoon baking powder
    • 1 teaspoon lemon extract
    • 1 teaspoon vanilla extract
    Cream butter, cream cheese and Splenda together, mixing well. Add eggs, one at a time, beating well after each. In a separate bowl, mix almond flour with baking powder. Add egg/butter mixture to flour a little at a time while beating. Add lemon and vanilla extracts.

    Pour into greased 9"-10" Springform pan, bundt pan, ring pan, (or 9" round cake pan) and bake at 350°F for 50-55 minutes.

    You can change flavors for this cake by using different extract flavors and even food color if you like!

    Makes 12 servings. 6.1 net grams of carbohydrate per serving.





    pumpkin muffins

    1 cup canned
    pumpkin
    1 cup splenda
    5 each lg eggs
    2 cups almond flour
    1/4 Cup flax meal


    1 teaspoon baking powder
    1 teaspoon vanilla extract
    1 teaspoon
    pumpkin pie spice
    How To Prepare: Preheat oven to 350. I used the silicone bakeware so you don't have to spray the pans. If you have the regular ones you need to spray with pam.


    Beat
    pumpkin, baking powder, vanilla, pumpkin spice and splenda until blended. Beat in eggs, one at a time then almond flour and flax meal. Pour into pan and bake 45 minutes or until done in the middle ( test with toothpick).


    Frosting

    8 oz cream cheese
    1/2 teaspoon vanilla extract
    French Vanilla Davinci's to taste
    Splenda to taste.

    Frost when cool.

    Per Serving (excluding unknown items): 210 Calories; 14g Fat (57.3% calories from fat); 14g Protein; 9g Carbohydrate; trace Dietary Fiber; 108mg Cholesterol; 132mg Sodium. Exchanges: 1/2 Grain(Starch); 2 Lean Meat; 1 1/2 Fat; 0 Other Carbohydrates






    PARMESAN CHICKEN
    3 large boneless chicken breasts
    2 ounces parmesan cheese, 1/2 cup
    2 ounces almond flour, 1/2 cup
    1/2 teaspoon garlic powder
    1/2 teaspoon Italian seasoning
    1 egg, beaten
    1/4 cup oil, or as needed
    Salt and pepper, to taste
    6 tablespoons spaghetti sauce
    4 ounces mozzarella cheese, shredded
    2 tablespoons parmesan cheese

    Cut each chicken breast in half to make 2 servings from each; cover with plastic wrap and flatten. Mix 1/2 cup parmesan, almond flour, garlic powder and Italian seasoning in a shallow dish or pie plate. Put beaten egg in a separate shallow dish or pie plate. Dip each chicken breast in egg to coat, then lightly coat them with parmesan-almond mixture. Heat oil in large skillet over medium heat. Fry chicken in hot oil until browned and meat is almost done, but still slightly pink in the center. Place chicken breasts in a foil-lined and greased rimmed baking sheet; season with salt and pepper. Top each with 1 tablespoon of spaghetti sauce, then 1/6 of the mozzarella. Sprinkle each with 1 teaspoon parmesan cheese. Bake at 350º about 20 minutes until chicken is done and cheese is melted and bubbly.

    Makes 6 servings

    Per Serving: 400 Calories; 25g Fat; 39g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

      WOW What a great deal! There is a cracker recipe somewhere, I'll see if I can find it. I've never tried it but it looks awesome.

      Also, since Barb posted that Fried chicken recipe I have used a variation of that breading for several things including fried Soft Shelled carbs (delish) basically you use 1/2 almond flour to 1/2 parmesean cheese just like you would flour based breadings.

        I used almond flour instead of crackers to make a squash casserole. Since alot of vegetable casseroles use sliced almonds, it just went perfectly! Of course I don't have a "recipe" per se, but basically you cut up the squash, mix in some egg, cheese, almond flour and butter, top with cheese and bake.

          Awesome!! Yeah, I already snagged Barbe's recipe for the chicken! Squash cassrole is a good idea too!! I will be able to get cheap squash again!! Lots of mom and pop veg stands there. I am paying on average $1.25 lb right now. If I am lucky I can get it at a dollar a lb. City prices bite!!

          Keep all them recipes comin!! I'm droolin' already!!

                      Barb, do you know where to find the cracker recipe--its from another site and they look kinda like ritz crackers? I can't remember where it is.

                              Nope, but I ran into a very long discussion about the recipe on another board a while back and everyone raved and raved over them. I had forgotten about them until this thread...I do want to try them!
