  • What's for dinner?

    The grocery store had broccoli for sale and so I am going to make something broccoli and mushroomie and then I have some pork chops thawing.
    Doesn't sound very exciting but I haven't had pork in a long time

    What are you having tonight

    I had pizza with flax meal crust. It was my first attempt and I have to say.... NOT BAD!

      Made tortilla soup sans tortillas , and am now noshing on strawberries and cream.

        Made stir fried chicken and vegies (peppers, onions and mushrooms)...with a side of Broccoli rabe (instead of basmati rice like my BF)...I am full full and very happy!

          My mom's in town visiting from KY. She made her delicious beef stroganoff, LC style for me! It was awesome! Not really for induction, but it was still on the legal side!

            Beef stroganoff should be great low carb, it's made with sour cream isn't it.
            What a great idea. I know they usually serve it over noodles but I bet it would be good over cauliflower rice

              What is cauliflower rice? I had it over LC pasta. But the pasta apparently knocked me out of ketosis, so I screwed myself! See? That's what I get for breaking the rules!

                There is only one noodle, made from yam fiber I believe, its Japanese and I can never remember the name.
                Cauliflower rice is cauliflower shredded and then cooked. You can make fried rice with it, hash browns and tons of other starch look-a-likes.

                  I miss this thread. I think at one point there was a "Whats for lunch" thread too.

                  Not sure what is for dinner, but I just made a fresh brocolli and cauliflower salad from Lindas that will fit right in!

                      I am having cauliflower with cheese sauce (melted creme fraiche and cheddar) sprinkled with bacon bits - yum!

                      PS The noodles are called Shiratake and are great.

                            I made a roast covered in potatoes, carrots, onions and parsnips for the rest of the family. I will have some of the roast and a salad with some great Kroger brand olive oil and vinegar dressing that I think is the best I've ever had. And there is only 1 carb in 2 tbsps!

                              Greek Grilled Chicken Salad: grilled chicken, romaine lettuce, chopped onion, black olive, cucumber, tomato
                              the dressing: 1/2 cup sour cream, 2tablespoons mayo, 1 Tbls. minced garlic, scant 1/4 cup diced cucumber, 1 teaspoon dill weed, black pepper to taste
