Cheers!

The recipe I used was given to me by a Jamaican friend. It originally was a recipe for Chicken Curry. I modified it.
1.5 pounds of lamb shoulder cubed
2 T Jamaican curry powder - the brand I used is Grace
1 pinch of ground cumin powder
2-3 pimento seeds - we know pimento as allspice. To find the unground variety, I looked in the mexican spices section at the grocery store. They look like black peppercorns
Salt and Pepper to taste
Dash of Ginger Powder
1-2 tsp of soy sauce
2 cloves of garlic, smashed
1 large onion, chopped
1 large bell pepper sliced
1 sprig of Thyme (I just happen to have fresh in my little herb garden)
2-3 Tablespoons of neutral cooking oil- I used grapeseed
Pour oil into a LARGE heavy bottomed skillet or dutch oven. Heat over medium to medium-high heat. Add all dry ingredients except thyme, & salt and pepper. Stir. It should look like brown sludge. Add lamb and stir. Let this cook for a minute or two, and add all other ingredients and about 1 cup of water. Cover and cook about 25 minutes. We eat this over "riced cauliflower".
If you want to try the chicken curry, sub 6 cubed chicken breasts for the lamb.
My dh was still recovering from the flu last night and didn't want anything for supper, so since I was cooking just for myself, I did something unusual. I thawed a chicken breast in the microwave, cut it into 1" cubes and fried it in oil. Then I used 5 different spices, a different one on different pieces of meat. I used a sprinkle of curry on some pieces, a sprinkle of Italian or Mexican, Far Eastern or a grilling spice on others, and I really enjoyed it! All those different flavors made it anything but boring. I think I'll do it again sometime. I had a cup of Collard greens with it and was stuffed by the time I finished!
