Well, that is two go aheads and I appreciate the support. I am not wanting to weigh..... I *have* to weigh! LOL
Jennifer, believe me I know the struggle of not having time or even the appetite to eat enough. So here are a few things I do to make sure I am getting enough..... calories that is!!
Try this, pack many small bags of high calorie foods in ziplog baggies. Try things like nuts or seeds if you have gone on to rung 3, some cheese strings, some hard boiled eggs, cut up veggies with some very high fat dip. Preferably made with a mayo base, or full fat sour cream. Cottage cheese (full fat) with some splenda and a bit of cinnamon or nutmeg, or all spice.... And try to bring a mock danish with you for the sweet tooth cravings that can hit around 3 pm. Here is the recipe for the mock danish... These can be warmed up a bit at work if you need something to eat.

Make sure you try the glaze for it. I think it makes it absolutely superb! (i make mine with all spice or pumpkin pie spice, in both the glaze and the danish!)
Also try bringing some jerky, and leftovers are always a good thing to carry along to work the next day!
I hope these give you some ideas jennifer. I find personally that if I can get in a very filling and high calorie breakfast, I will be ok for the day. I mean like 500 to 600 calories on breakfast alone. Then a snack around 200 calories, lunch around 500 calories snack#2 200 caories or more. Dinner is where I top up my calories for the day. ANd if I am still a bit low, a low carb high fat dessert is great. Try some peanut butter (no sugar) with cream cheese. Or a mock danish, or some stella style NY ricotta cheesecake. 300 caloreis a slice and 7 carbs. Maybe a bit high in carbs for induction but perfectly fine for those on OWL who have figured out their CCL.

Just as a side note. I know this may seem extreem to some folks, but here is something to consider. I was a proffessional cake decorater before I started Atkins. I quit my job because it was harming my health. Believe me that this wasn't an easy decission. I gave up having my own income, and I gave up many things I would consider to be very important to me. But I realized that if I didn't start taking care of me, there would be no me to take care of in the long run. Or even in the short run considering my health issues. Sometimes we get into the habit of leaving ourselves for last. This can happen by always doing things for you children without putting some time aside for yourself. And it can happen in the work[lace as well. Maybe you have a boss that asks you to work through lunch, or breaks and legitimately the place may be a really busy place..... but you only have one you. If you need to put your foot down and take 20 minute a day to eat... then do it!
You are worth it. Schedule time for you. No one else is going to do it. People are always taking. It is time we stand up for us and say no, this is my time. Happy low carbing everyone! And here is to your health!
