      I will be doing the happy dance the day I hit 35 pounds gone....it's been a long journey but at least I didn't loose everything so fast (like I did when I was younger) and not learn the lessons I need to regarding keeping the weight off!!

      I love pork chops with the bone in also -- that's what we had for dinner. I had a fried pork chop (no breading), 3 thin slices of tomato, 1/2c creamed turnips and 1/2c green beans. YUM -- that was a great meal.

        I had a long day at the high school helping with registration. I didn't drink enough water and crashed when I got home. It is around 6pm here and weirdly there is no one home. No clamoring from the hungry crowds like usual. Guess I should take a late nap more often lol. I bet if I start cooking my family will magically appear! I think it is a taco night. Taco salad for me and any late comers can forage! Have a nice evening. Eva

          This was my lunch today -- my BLT (bacon and tomato with Hellmans wrapped in a lettuce leaf), deli deluxe cheese chips and the other slices of the tomato that were left over. It was DELICIOUS!!!

            I made it -- FINALLY -- 35 pounds gone (6 more pounds and I'll be half way to my goal)

            It's been a busy day so that has helped. I haven't really been hungry all day with all the running around - and to top everything off the whooshie fairie came for a visit -- I haven't seen her in AGES!!!!! I guess my metabolism has finally caught up and is ready to let loose of a few more pounds. Patience is not my strong suit but I wore that tattered old suit well.

            Tomorrow I need to get back on the bike....I've been off it for a couple days - my left knee was giving me fits so I decided to give myself a time out. I've replaced the biking with 3 or 5 mile walks ... not quite so taxing on my knee - but it feels better today so we'll see what happens tomorrow.

            This morning I went out and picked tomatoes and beans.....I weighed everything: 4-1/2 pounds large tomatoes, 1 pound Roma tomatoes, 12oz grape tomatoes, 15 oz green beans



            I'm going to go get some comfortable clothes on and relax the rest of the evening! Have a great day.

                  I'm making homemade Spaghetti Sauce today with some of the tomatoes from our garden - my recipe calls for 12 pounds of tomatoes but I'm going to make a half batch today to see if I like this recipe - I haven't used it before. It calls for 1 tablespoon of sugar (that's for a half batch like I'm making) but I'm not adding sugar, maybe a small amount of Splenda if it really needs it - I also can adjust the spices to my liking. When it's done and cooled I'm going to put measured amounts into ice cube trays and fill freeze it so I will be able to have sauce for spaghetti squash or other meals (like parmesean chicken) during the year and it will be legal. Last year I froze whole tomatoes but wasn't excited about using them -- I put them in stews and soups but they fell apart once they were in the soup ... so I won't do that again.

                  Ok -- it's an hour later and the spaghetti sauce is in the stewpot cooking....I hope this is a good recipe -- I've made spaghetti sauce before but it was from a mix I purchased in the store (with sugar added) - it was one of those deals where you cut up tomatoes, added the mix and cook for the amount to time it said on the package. That was fine for that time in my life but not now -- now it's home made and fresh ingredients - no chemicals, no preservatives, no sugars.

                  The first time I made salsa I made it the same way as the sauce - with a mix, but after that time I figured out what I did and did not like and made my own type of salsa which my family loves. I even made it once in the late fall after the tomatoes were gone but used canned tomatoes in place of fresh -- that was good also - and didn't take as long to make (which was a bonus since my brother wanted to take it home with him and was leaving the next day).

                  I'm running around here doing things and then coming back and typing a little. The sauce is realy doing well -- it said to cook it down for 1 hour but I am going to cook it a little longer to make it thicker. It smells good and I think I have the spices right now (I had to tweak the amounts to make it taste better for me). It should be ready in about 15 minutes....I'm going to freeze a couple ice cube trays fill of sauce and I'll put the rest in 1/2 pint jars and can them.

                  Almost time for lunch....need to make some tuna salad.

                    I got 7 half pints of spaghetti sauce out of my batch and 6 ice cube size frozen cubes of sauce. I had planned to freeze more but by the time I was done I decided to just freeze a few to see if I would like it that way or not.

                    I think I have enough now, I don't need to make anymore. The less I have the fewer times I will eat it -- which is a good thing! I figure 3 of the ice cube size are 1/2 cup so I have 2 servings of frozen sauce.

                    I bought a couple zucchini the other day at the store and I want to try them as noodles. Thought I'd use some of the frozen sauce on top of the zucchini.

                    I wasn't real hungry at lunch so I had a can of tuna made into tuna salad (hellmans, celery, sf relish and tuna) and sliced 1 piece of deluxe deli cheese slices into thin pieces and microwaved them a minute to make cheese sticks. That is becoming a favorite meal of mine.

                    Awwwww.....I just went and checked -- all the jars sealed!! YIPPEE.....I don't enjoy the canning process when I have jars that refuse to seal...

                    I had something new today -- I bought a plain greek yogurt (6 carbs total) so I took half of it and added 3 strawberries cut up and a Splenda packet...it was so yummie. Not something I would want everyday but I was hot and wanted something cold and that did the trick. So far so good with strawberries this time...I guess as long as I keep it to 3 strawberries at a time I'm good.

                    Need to start laundry --

                      The spaghetti sauce sounds lovely. I haven't ever tried any canning, but I remember my mom's delight when all the jars would seal as planned. My tomatoes are not ripening in super abundance yet. Its okay though, I seem to have as many as my family will eat. The zucchini has been great but my new favorite are the little Japanese eggplants. I slice them very thin and season with salt, pepper, and a little garlic and saute in olive oil. They are wonderful! Its nice to have a quick meal that tastes fabulous.

                        Hi everyone, I'm still here!!!

                        I've been spending 13 hours a day at the blueberry sales shed so I don't get to spend much time online. I haven't been tracking what I eat either but was delighted to find that after not weighing myself for 2 weeks, I'm still maintaining at 161!

                        Our son-in-law, who lives next door, often cooks for us because he knows I'm too busy to. The other day he bought pizza and when I ran over to the house for a minute, it was lying on the countertop and I thought 'Oh, what the heck, I'll eat a piece!' Well, I took one bite and the crust balled up in my mouth and I thought, 'This is awful!!' So I spit it out and just ate the toppings. I just can't make myself eat that carbage. That's the Atkins mentality and I love it! I did eat more of the chili he made on Sunday than I wanted to but it didn't affect me at all. I don't get the chance to eat much most days so I'm doing fine.

                        I'll try to write again later because this is my day off. dh wants his breakfast now.

                          How much longer will the blueberry fields be open Nyna? I bought a quart of them a couple weeks ago and really had to fight to stay out of them! I've never had to measure how many I've eaten so it was different for me! I had strawberries a couple times this week (only 3 at a time each time) but they are all gone now because they went bad. Mom bought a cantaloupe yesterday - I won't be eating any of it....darn! I was never a big fruit eater so this hasn't been a problem for me and I'm high enough on the rungs if I want berries I can have some - so that is nice also.

                          I wrote this in my journal also but I'll put it here....I baked a turkey breast last night for dinner. Needed something different to make for tonight with the meat so I found Linda's recipe for Cheesy Broccoli Chicken casserole and substituted turkey for chicken - I substituted a few other things but when it was done and I ate it I really liked it. The recipe called for sour cream but I didn't have any so I used the same amount of Greek yogurt in place of it. I also added dried onion flakes because the only spice it called for was 1 tsp garlic powder (backed that to 1/4 tsp) so I thought it needed something else. I didn't put the chicken boullion in that it called for because I don't like using boullion (too salty for me). The recipe said it would be a little "soupy" but because I didn't put the boullion & water in mine wasn't soupy at all. I really liked it and will make it again, maybe next time with chicken!!! LOL

                          Well, it's time to take a shower and relax. Have a great Atkins weekend!!

                            I'm channeling Don Ho today .... "Tiny Bubbles".....I love those tiny bubbles -- they have a completelly different meaning now....tiny bubbles and a strong aroma make me happier than I can tell anyone these days!

                            My next mini goal has been to hit 179 -- I'm 2 pounds from it and am hoping to see it on the scale by the end of the week...oh please please please please!!!!!!!!!!

                            Mom and I have been talking about our little trip next weekend. I'm happy we're going - I hate the driving part but it's time for a road trip! I really didn't enjoy when I went to Iowa every 3 weeks and spent 4 - 5 days....that got real old, especially in the winter - but we haven't been out of town since the week before Christmas so it's time.

                            If things go ok this weekend maybe next month or September we'll go to Nebraska and see the new remaining cousins of hers that are alive. We haven't been for about 10 years - and we've lost 2 more cousins since then so it's time before the last 2 are gone. We'll only see 1 of her cousins because the other moved to Colorado and I'm not driving that much further...lol!!! Also mom's step brothers & step sisters are still in Nebraska but I'm sure we won't be seeing them because she never liked them anyway (they weren't raised together - and she barely knows their names).

                            I made one of Linda's recipes yesterday and it was great - Cheesy Broccoli Chicken Casserole. I made some changes to it but put it through FitDay and made sure I have the correct numbers after my changes. I had it again for breakfast this morning before I mowed -- it was better today!!

                              Monday....yep it's another Monday! We are suppose to have storms today so we took our walk early this morning. It's much cooler today than yesterday - by almost 20 degrees. It sprinkled on us a few times while we were out but it didn't rain - yea!

                              Sadie has a vet appointment at 2:00 today, tomorrow I go pick up prescriptions, Wednesday is an oil change - go to the store for supplies to take along and fill the tank with gas, Thursday hopefully will be a free day to get ready & pack the car. Friday morning as soon as I can get mom up and aound we'll be leaving (hopefully no later than 8:00 a.m. -- I'd like to leave around 7:00). Quick trip will be back on Sunday.

                              I just had the last bowl of chili I made last week. I put it in the freezer to see if I could get some of the heat to go away -- it worked (yea)!! It was much easier to eat this time. It was wonderful - I cut up a Nathan's hot dog, 1/4oz onion and 1/2oz cheddar cheese on top and stirred everything in - that's a "keeper" recipe!!
