Never thought to mash brussel sprouts...hmm.

My dinner for tonight is going to be 2 grilled beef patties stuffed with sharp cheddar and bacon. I am also going to try my hand at baking a pumpkin and having mashed pumpkin with real butter. If I am still hungry I will have a small salad of romaine and broccoli with a tiny bit of ranch dressing (I am not a big dressing eater).

I am looking forward to the pumpkin

I don't care for brussel sprouts any other way - I've tried them all. So I just cook until very tender, then mash with butter and season. Both me and hub really like them this way!

I am going to my parents for a birthday dinner tonight. They are supportive which is truly helpful.

Mom is making roast beef and a salad, I am bringing mashed cauliflower and for appetizers smoked salmon on endive with lemon, garlic, parsley and cream cheese!

It's cold and rainy here so dinner tonight is pumpkin and sausage soup. I thought it was a bit bland so I added a pinch of curry.

I used hot sausage, homemade chicken broth and some of the fresh pumpkin I cooked up last weekend. Canned pumpkin would work fine and Rachael Ray's Chicken Stock In A Box makes a good sub for homemade broth.
