      Cut 3 strips of bacon into 1/2 inch strips begin to saute in pan. Then, in this order (as I cut them up), tossed in some sliced onions, bell peppers, jalapeno, whole green bean, minced garlic & mushrooms.

      Served over riced califlower.

      Large glass of water.

        Chicken livers and sliced mushrooms braised in butter. Add onion powder, salt & pepper to taste while cooking. These are not fried, rather the juice from the mushrooms and the butter sort of poach/braise the livers. They are very soft and tasty. Do NOT overcook.

        Limit liver to 4 oz./day

          I had my low carb california sushi roll . however, nori isn't on the Induction Acceptable Foods List. But the fillings for the california roll----real crab, avocado---are and would make a good sandwich filling if wrapped in a lettuce leaf.

            I had salmon (glazed with a mixture of dijon, sugar free "maple" syrup, and butter)
            broccoli and zucchini cooked in chicken broth and covered with melted colby cheese
            a few mushroom sauted in butter

            Don't worry it's for me, not you.

                      Tonight we're having Chicago Hot Dog Salad. Linda Sue has used Rachael Ray's recipe and scaled it down to make two servings and of course, included nutritional stats.

                      I'm using: Applegate Farms Organic Uncured Beef Hot Dogs (no nitrates, no nitrites, no sugar)*, Bragg's Organic Unfiltered Apple Cider Vinegar (much better than the clear, regular grocery store kind) and to make it more like an original Chicago Hot Dog, I'm adding a chopped sport pepper (Serrano pickled pepper) and a dash of celery salt. Sport peppers are HOT and I'm a hot pepper weenie so I only use a little.

                      I've tried this recipe before and although it sounded sort of weird to me, I wanted more than a plain hot dog with a side salad or something. That was boring! This is a very tasty recipe and the salad mixture can be made ahead for BBQs or picnics and then just add the hot dogs when they come off the grill. You won't even miss the bun!

                      *Using these hot dogs shaves off 2g net carbs per 2-hot dog serving from Linda's recipe stats.

                      For those who prefer sweet pickle to the sour ones, Mt. Olive makes a no sugar added line sweetened with Splenda.

                            It's cool and windy here today so we're having Italian Wedding Soup for dinner with a side Caesar salad with mini grape tomatoes because I feel like them.

                            Italian Wedding Soup is chicken broth, sliced mushrooms, frozen chopped spinach (really prefer escarole but didn't have any) and meatballs with shredded parm cheese on top.

                            Soup meatballs: ground chicken, chopped sun-dried tomato, chopped fresh basil, shredded provolone cheese, egg, garlic powder, onion powder, paprika, sea salt, freshly ground black pepper shaped into meatballs and cooked in the simmering broth. Add mushrooms and spinach and simmer a bit more. Serve with parm cheese.

                            Sounds difficult but it's really easy because you just plop the meatballs in the soup to cook.

                                My husband is cooking dinner for me and my MIL.

                                We are having a feast tonight.
