    Wow! Everyone's having such deeeeeeelish meals!

    Tonight, I'm having "Bollito", a central Italian classic. It's really boiled meats (beef, chicken, tongue). You boil slowly (like 3 hours) with veggies (potato, carrots, celery, tomato). Then you eat the meat lukwarm with lots of lovely sauces (tuna sauce, green sauce, mustards, horsradish or just plain oil and lemon). The broth is wonderful. Italians put in "cappelletti" (stuffed pasta), but I just have the broth on its own. I also go easy on the potatos with the meat... maybe just a quarter of one.

    A real winter comfort dish... and here the weather makes one need something comforting right now; rain, fog, cold.... ugh.

      We're making mashed fauxtatoes and beef pot roast tonight. Will have some salad on the side with real bacon bits and blue cheese dressing.

        It was DHs birthday and so he got lasagna but for me I made an Atkins friendly moussaka, green salad, and for dessert an Atkins friendly molten chocolate cake. I almost never eat dessert but this one was a winner! Dark, not overly sweet, and oozing the Belgian chocolate from the middle. Heavenly and legal!

              I have a corned beef in the crock pot today (I found it yesterday in the corner of my freezer). I just tossed it in (I'm taking a break from painting my spare room.) Anyhow, it'll have the usual cabbage, carrots, celery and a tiny bit of potato.

              My local supermarkets are having their annual Thanksgiving turkey sale this week. So, I'm going to stock up on some turkeys.

                I tried an almond flour pancake for the first time today - I think I like it better than "real" pancakes Had it with 1 breakfast sausage.
                Lunch was 2oz frozen strawberries & 125gr (5 carbs) of yogurt blended together. This makes something like a milkshake.
                Dinner was a salmon burger on a flax muffin with cheese, red onion & mayo. ...hmmm, I guess I was a bit low on the veggies today. I'm sure I'll make up for it in the veggie challenge this week.

                  I had lunch out yesterday and chose tossed mixed greens with pine nuts and olives and a dish of ribs with ginger sauce. Was good.

                      Not sure what's on the menu for dinner yet...but a few days ago I had a salmon burger w/mayo on revolution roll buns and oh my, was it delicious!

                          Yesterday had chicken pieces cooked with EVO, wine, carrot, onions and celery; salad and a small portion of Purea di Fave (that's dried split broad beans, poached with a small amount of potato, anchovie, garlic, bay leaves, salt and lots of olive oil... then purèed) It's often eaten with toasted bread - which I didn't have - with newly pressed olive oil drizzled over it - it's olive harvest time here, right now. This is a speciality from Puglia (the heel of the boot) and is quite wonderful, though pretty carby and calorie dense. Small portions are definitely the order of the day!

                            I'm making Cod en Papillote for dinner, which is basically cod with wine, leeks and carrots, and salad with spinach, feta cheese, strawberries, apple and pecans.

                              That does sound delicious G. I have to make sure I copy down that recipe.

                              I have been trying dreamfields pasta lately. A product with protected carbs. How much does one trust that? But it good. And I was able to stick to the portion size - which is super small compared to how I used to load up with pasta. Had my favourite ground beef tomato sauce with it - always has some good veggies in it too.

                                I am afraid of Dreamfield pasta.

                                When I did Atkins before (2003), one of my mistakes was too many frankenfoods (though it didn't seem to hold me back at that time). I got some kind of low carb pasta (it wasn't dreamfield) and it was awful! I have been afraid of low carb pasta every since. I would rather do without something than to have it and not taste good.
                                My son says...even the worst pizza is still good pizza. I don't think that is true for all food. lol
