    Okay here are my totals for day 3 of Veggie Challenge!

    Went up to 15 net carbs today! (INDUCTION) Yayayay!
    I had lettuce, cucumbers, onions, pickles, zuccini and mushrooms!


    Tomorrow I try my new veggie, broccolini! And I'm also gonna try jicama too. It intrigued me Silly when you said some people fry them like french fries! YUM!

      Yeah, yeah... I know. I have had a fear of squash. I have tried steamed yellow squash before, and was not impressed. Not much taste, and I wasn't crazy about the texture. During the last Veggie Challenge, I tried eggplant. I tried grilling it. I don't think I cooked it long enough... it tasted like a mildewed sponge. It turned me off of squash. (Spaghetti squash is OK) So I have been afraid.

        Today I have 21 net carbs again

        didn't try my second new veggie yet, will do that tomorrow, that will be eggplant.

        tomatoes
        lettuce
        onion
        bellpepper
        kraut
        sugar snap peas

          Another successful day. . . I had 18 grams of veggie carbs, once again from ratatouille, lettuce, tomato and pumpkin. I went shopping and bought my new vegetable - jicama. Now I just have to figure out how to make it.

            mary, if you search the board using the advanced search feature on the purple tool bar under the ads, you'll find lots of things referring to jicama. happy searching!

              You know what I was thinking? I'm going to continue to really experiment with veggies and go for 12-15 net carbs from veggies even after this challenge, I'm enjoying it so much! I can't wait to make some of these great veggie dishes I'm reading about!

                Veggie Challenge Day 3

                I'm sorry to be posting so late. It's been one heck of a day and I'm still at work. UGH.

                Anyway did pretty good today.

                14 carbs:
                fried cabbage and onion (YUMMY)
                salad with cucumbers, tomatoes, celery

                Still trying to decide on that new food. Shopping tomorrow so will pick something up.

                    Yesterday (Wednedsay) I got in 27 g carbs (I imagine it doesn't matter if you go over) from: Cherry tomatoes, lettuce, radicchio, swiss chard, carrots, fennel, green pepper, celery.

                    Was thinking of trying white eggplant as a new veggie, if this counts as new. I've eaten masses of eggplants in my time, but never the white variety. Having trouble finding a veggie I've never had, in the supermarket. If the eggplant is not ok, I might be reduced to picking nettles and making nettle soup!!! Lol

                        a green pepper in my stirfry for lunch
                        more spaghetti squash for breakfast with less oil, tasted much better!
                        and 2 cups of broccoli in my dinner omelette.

                        approx 20 net carbs veggies

                          Awesome! After your induction, you should move up to rung 1, which is just more veggies for a total of 17-20 net carbs per day. It would be better to do that than stay at induction levels too long!

                            LOL! No, it's fine to go over in the veggie department! Ooh, do try white eggplant. I bet it tastes the same. What will you do with it?

                              Zucchini is sweet and soft. It's very good Emma. You can do the same thing as you did with the beans/onions. Just slice it in like 1/2" slices.
