    Monday:
    salad with 2 cup lettuce, .5 cup tomato, 1 tbspn fresh cilantro
    2 cups mashed calabaza (pumpkin)
    200 grams jicama
    salad with 3 cup spring mix and some cranberries
    salad with 3 cups romaine, 2 cherry tomatoes
    1 cup sugar snap peas
    56 net carbs
    40 fiber
    11 non-veggie carbs

    Tuesday:
    1 whole small zucchini
    1 large yellow pepper
    50 grams jicama
    tomato sauce, onions, peppers
    1 cup broccoli
    1/2 cup carrots
    45 net carbs
    14 fiber
    20 non veggie carbs (ouch)

    Wednesday:
    300 grams jicama
    .5 cup onions
    1.5 cups green beans
    2 cup romaine lettuce
    .5 cup avocado
    67 net carbs
    58 non veggie carbs (aaaahhh!!)
    32 grams fiber

    I scoured the market and couldn't find any new veggies I haven't had before. Well, that's not true, the only one was celeric root. I haven't a clue what to do with it....

    Oh wait. I haven't tried butternut squash. Could do that. Except I don't have a way to cook it. Maybe I'll try to find a restaurant that's serving it...

      I have a feeling it'll taste the same too. Have been told they're a little milder than the dark variety.
      I'm probably gonna cube the eggplant; toss it in a "soffritto" (a sautè of garlic, olive oil and chili pepper); cook covered, adding a very little liquid whenever necessary until nearly done; add a few chopped cherry tomatoes... finish cooking for like two or three mins more, and at the very end, toss in a good handful of basil leaves... just to wilt them (if you cook them more, they lose their flavour). Totally yummy, served lukewarm... if you like eggplant that is.

        ok put me down for 19 net carbs today ............


        Breakfast was a veggie omelete

        Lunch chef salad filled with veggies too

        Dinner will be stirfried squash onions peppers and Keilbasa

        Oh and I got my new veggie for tomorrow I bought two to try actually one I am most likely to enjoy and one I'm not sure Brocollini is the one I think I'll like and Jicama I'm not so sure about but will try

        I have to tell you I am loving this challenge but ashamed to realise I ahven't been eating nearly enough veggies this whole time I thought I was ........

          20 today and trying new veg for me - pumpkin.

          Am away tommorrow and for the weekend but will report friday's veg when I get back.

              Heidi - that's the best part about this challenge... realizing that we weren't eating as many veggies as we thought we were. I broke a stall with the last Veggie Challenge - 3 pounds gone that week! I have continued eating above the minimum requirement since that challenge, and I know that has been the key to my success. I'm glad that you're enjoying the challenge.

              About jicama - I eat it almost everyday because it has good carbs and great fiber. I have only eaten it raw. Jicama is a root vegetable, and the first time I ate it, it tasted kinda "root-y" to me... I wasn't crazy about it... but it wasn't gross. After eating it a few more times, it grew on me and now I eat it often.

                I ate my new veg, kohlrabi and will definitely be having that again!!

                I cubed it, and roast it in olive oil with onion, mushrooms, garlic and chili. It was delicious. Firm and well textured, in fact quite potato like as a roast veg. I asked DH to guess what it was - he thought it was sweet potato and it was quite like it.

                So my veg to-day was kohlrabi, some left over cauliflower mash from yesterday, mushroom, onion, garlic, chili, a green onion, a slice of sweet pepper and lettuce.

                    20 net today! That darn roasted cauliflower is tooooooo addictive...Also had a nice mixed salad with boston lettuce, bean sprouts and shredded carrots!

                          Just made it today - 12g net veggies. Didn't get to try the turnip though. Definately will on my last day.

                            today i had 20 net carbs
                            i tried eggplant for the first time, i fried it with a flaxseed flour coating in olive oil...then put diced tomatoes on it and sharp chedder cheese, cooked it for 10 min and covered it in parmasan cheese....i LOVED it...and will be eating it again and again.

                              Michelle, you're a lot braver than I am for trying out eggplant! I'll keep your recipe in mind though.

                              Kate, so the kohlarabi tasted like a sweet potato? I'm curious now! This one may be well worth searching for at the grocery store.

                              I had 19 net grams of carbs from the following: red & green bell peppers, a few olives, cucumbers, cauliflower, green beans, and a few slices of onions.
