    Hi everyone - what a lot of veggies!

    I had 17g veggie carbs yesterday:
    4 cherry toms, 1 cup mushrooms, 1 cup spinach, 2 cups lettuce, 1 cup rocket (arugula), 1 cup kale, 1.2 cups broccoli.

        My green beans were frozen. I needed to buy enough veggies to last me two weeks, so the frozen were the better bet. Since I never really ate veggies before I don't notice the difference between frozen or fresh, haha!

        Funny story: when I was 16 I was a Vegetable Chef for two years at a 4 star restaurant. I came up with very creative ways to taste the food I was making. Since I hated (notice past tense? hehe) veggies I normally would have someone taste it or just bite into the carrot or bean to make sure it was done then I'd spit it out into the trash of course. I never actually ate or even tasted any of the veggies I used to make. hahahaha.

          Hey IrishMom - do you remember any of your creative recipes? Share!!!

          I finished yesterday with a gross veggie carb count of 30g less 13g fiber = 17 net veggie carbs. The veggies I ate were cauliflower (raw) at breakfast, grilled green beans w/ tomatoes, some pretty raw onion & tomatoes mixed in with my pork souvlaki at lunch, and then broccoli at dinner.

            I love broccoli slaw! We used to eat it all the time but I stopped because of the carrots. I never thought to pick them out. Duh me!

            My favorite way to eat it is with Newman's Own Lighten Up Light Lime Vinaigrette. I am going to have to come up with a lime vinaigrette to replace it. Yum!

              I got tied up last night, but I figured my veggie carbs for MONDAY at 14 from green beans, bell pepper, zucchini, avocado, and a little lettuce.

                I am heading out shopping this morning and plan to pick up some fresh veggies ....... Leeks and now broccoli slaw will be at the top of that list .......

                  Aww sorry, my most creative recipes had to do with rice and/or white potatoes (bad carbs, bad carbs, and more bad carbs)...everything else was pretty much steamed with butter and salt and pepper. Sorry.

                    Mitzi - my husband has cooked them once before, I never have. Matter of fact I haven't eaten one before, but I am today He steams them until they are almost done, then sautes them in a pan with butter...just to get them a bit brown around the edges.

                        For those of you who are using PC fitday, this is really neat:
                        1) Set up fiber reporting by entering a fiber goal under "my nutrition"
                        2) Choose to show "reason" under "view>choose food log columns" at the top of the food log page.
                        3)Click the down arrow in the reason column
                        4)Scroll down to the bottom and choose "create new reason". Name your reason "Veggie" or something like that.
                        5)Select this new reason for all your veggie entries
                        6)Select the "nutrition by reason" report in the left hand column
                        7)At the top select "carbs - fiber"
                        click "update"

                        You will see a pie chart of your net carbs divided by reason. If you hover over one of the sections, it will give you the net carb total for that reason. I use this report to track whether I am meeting my goal of half veggie carbs per day.
                        I have created a reason for "fruits" also.

                          You don't really "prepare" it....you peel it, and slice it however it appeals to you. I cut it into matchsticks and eat it like that or tossed into a salad. If you've never tried it before, beware...it's a little like a raw potato at first...a little earthy....but once you get past that, it's sweet, refreshing and crunchy!

                          SOme people have tried cooking it in a frying pan, but it just doesn't soften up, so you may as well just enjoy it raw. Lots of fiber!

                            Jicama - You can slice it and put a little lemon or lime flavor and a little sweetener on it. I use True Lime (because it has a more intense flavor) and granulated sweetener. If you let it sit for a few minutes, it gets juicy.

                              Sonya, you're using Fitday, right? To get the exact number of net veggie carbs - while you have the list in front of you on the screen, click on each veggie on your list and it will take you to the facts for that entry. On each veggie, you take the total number of carbs on that veggie, then subtract it's fiber, to get your net carbs for that particular veggie. Do this for every veggie on your list, and add up all of the net veggie carbs from your list of veggies for the day, and that's it.

                              Let me know if I can clarify it any better, OK?

                              Edited to Add: Sonya, I re-read your post and have a question - was that 32 carbs for the day total carbs or net carbs? Meaning, had the 11g of fiber already been subtracted from your total carbs to get 32? (43g total carbs - 11g fiber = 32 net carbs) or was it a total of 32g carbs that you hadn't subtracted the 11g of fiber from yet? I just want to make sure that you understand that you go by net carbs when doing Atkins.

                                EDIT! I forgot I'm having FF sour cream instead of mayo today and it has carbs...dang... so I just added in pickles... I'll have to be back later to report my "real" counts. And here I was so proud of myself!
