    Zucchini was my new veggie in the last Veggie Challenge. I have heard of making noodles from it, but have never tried it. You'll have to let me know what you think!

    This is the way that I have mine... I sliced them into thin "rounds", then dipped them in egg, then dipped in parmesan cheese, then fried in a skillet with olive oil. Very yummy!

      Funny story: when I was 16 I was a Vegetable Chef for two years at a 4 star restaurant. I came up with very creative ways to taste the food I was making. Since I hated (notice past tense? hehe) veggies I normally would have someone taste it or just bite into the carrot or bean to make sure it was done then I'd spit it out into the trash of course. I never actually ate or even tasted any of the veggies I used to make. hahahaha.
      LOL! You REALLY don't like veggies, do you?

      We're going to fix that!

        LOL... well, it IS a pain in the @ss to do it. You can weigh the carrots after you've picked them out, to see how many carbs to subtract from the facts on the bag... it's not much, but I did it anyway (told you I was anal ).

        Sometimes there is something called "California Slaw" that is usually right next to the Broccoli Slaw, and it is the same exact thing as Broccoli Slaw, except it has some broccoli florets in it, too. A lot of times, it also seems to have a little less carrots in it. Either one you can find is good!

          I was just reading up on the thread, so many more veggie combos out there than I would have thought! LOL I love the zucchini noodle idea, slaw and they are easy to make!

          IrishMom - I agree - spill some of those great recipes!!! I can't wait to hear of how many veggies you eat at the end of this challenge!!

          Brandiwine - kohlrabi - I think there is a guy at work here who peels it like a cucumber and eats it with salt.. I believe its the same thing. He said it tastes a bit like raw potato? Let me know how you like it and how you prepared!

          I bot spinach, raw fresh spinach... not sure how I'm going to venture to make it yet. It will be my "new" veggie of the challenge. I think I've had it in salads before but usually have frozen or canned.

            B) none
            L) casserole w/cabbage & red pepper~~~4 net carbs
            0.5 cup cucumber~~~1 net carb
            14.5 oz can wax beans~~~7 net carbs
            S) 0.5 cup pumpkin~~~4 net carbs
            D) salad w/broccoli, cauliflower, cuke, peppers, tomato~~~3 net carbs

            Total carbs~~~19

            I'm HUNGRY today! The cabbage/chicken casserole is now gone!! I think I'm going to try eggplant as my new veggie. I haven't eaten it in many many years. Now to find a recipe!

              Lunch - 1 Cup Sliced Green Pepper = 6.0g net carbs
              Snack - 1 Pickle Spears = 1.0g net carbs
              Dinner - 1 Cup Sliced Green Pepper = 6.0g net carbs
              Total = 13g net carbs

              I used to eat green peppers when I was a kid so today wasn't too bad. I don't mind them raw. My plan for today was to actually have Broccoli for lunch but I chickend out and had Green Pepper instead...I'll try and work up the strength to try broccoli...haha.

                Irishmom - how about the broccoli with butter and salt and pepper! YUM!!!

                Glenda - someone is bound to have a deep fried zucchini recipe, that sounds good!

                Veggies for me today 29 total, 12 net carbs - per my fitday inputs. I think I can safely say that is the end of it today, I'm stuffed!

                  Ok, for my new veg I tried pumpkin. DH really liked it, and I thought it was OK. I'll eat it again and try things a little different. I didn't have allspice so I had to leave that out. I'm going to buy it when I go shopping and try it that way. I also want to try it with just pumpkin, cream cheese and splenda.

                  Today I had 4 cups romaine lettuce, 1 cup cucumbers, 3 oz snow peas, 1/2 can pumpkin, and celery. So far my net carbs are 13.6. I'm going to try and eat some pickles later to bring it up some and maybe some more celery.

                    That sounds good, pumpkin with cream cheese ... May try that tomorrow.

                    After work went to the vegetable market and food store.. no jicama.. (sp?).. Not even sure what it looks like.. LOL.. So, if I come back and say that it tastes like licorice.. Seriously, until I came on board, never heard of it.

                    Today had my 19 carbs. Tried Oriental Vegetables slicing a roasted chicken breast with it. Actually was good. (Lunch)... Breakfast was not a BLT, but a BLE salad.. Bacon, Lettuce and 2 hard boiled eggs, with mayo. That was a new combination and wasn't bad at all. Rather refreshing.

                    Had a V8 juice to bring my carb level up. So, for the day it was 19.

                    Will have to look in the local stores in the city to explore any new veggies.
                    I have been a big veggie eatter in the past.. so there is nothing to new that I can see. The pumpkin sounds good.. will try that.

                    What this all has done is to have me explore new recipes and have more a variety in my busy hectic life...

                    A good recipe for veggies is: cut up vegetables, i.e. mushrooms, broccoli, red onion, cauliflower, peppers.. just do not use eggplant.. that turns out slimey...LOL Place in a glass baking dish. On top, place alot of ground pepper. Back 350 * for 30 minutes. It is very good. An option is to place cheese on top, back into oven for about 15 minutes or until cheese is melted.
                    If you do not care for veggies, you will enjoy this.

                      Since I can't find any veggie i haven't tried, i'm going with one I haven't eaten since doing Atkins----eggplant. Standard fair was to make eggplant parmesan, and since substitues for breadcrumbs never thrilled me, i haven't made anything else with eggplant.
                      So, i'm gonna go hunt up a recipe or 2 and see what or how eggplant can be without breading.
                      Hope that qualifies! othrewise, someone is gonna have to send me something!

                            MAY 13 - I had jicama, summer squash, asparagus, onions, red and green bell peppers, snowpeas and tomatoes.

                            64 total carbs, 35 net carbs, 22 net veggie carbs.

                              my veggies for the day: brussel sprouts, salad, bell pepper, avocado....

                              I'm sort of torn on this new veggie thing - I'm sort of a veggie-obsessed person, and I've tried A LOT of them. Not sure what to try........but I love all squash (yellow, zucchini, spaghetti..), pumpkin, celery, broccoli, cauliflower, peppers....

                                Hello, Fellow Veggites!

                                Everyone is doing well - yay!

                                Glenda, thanks for the visual aid for jicama. The pic is perfect!

                                I bought my Leeks today, and will have them tomorrow or Thursday. I love onions, so I'm betting that I will like these. Hope so! I discovered an interesting fact about Leeks... they are the national emblem of Wales, symbolizing the victory of King Cadwallader over the Saxons in the year 640.

                                As I mentioned earlier, I never ate veggies prior to Atkins... well, except for french fries, corn on the cob, and an occasional baked potato if it was mega-loaded with butter, cheese and sour cream. That's it, though... I didn't even like mashed potatoes. So for the past 15 months, all of my veggies have been new ones. And out of all of the veggies that I have tried, surprisingly there has only been one that I didn't like... in fact, I hated it. It was eggplant. I hesitate to bring that up, since so many of you are trying it as a new veggie. Don't let that discourage or taint your expectation of it! I sincerely think that I did a poor job of preparing it, so I can't really blame the eggplant. I tried grilling it on the grill outside... brushed it with olive oil, and placed it on the grill. I was very disappointed... it was gross. I think that I sliced it too thick, and didn't cook it nearly long enough... it tasted like what I imagine a mildewed sponge would taste like. The fact that so many of you are considering it for your new veggie is exciting! It has inspired me to want to try it again... maybe I'll try it on Friday. Here is a fun fact about eggplant - It was called "mad apple" when it was introduced into northern Europe because botanists believed eating it caused insanity. LOL!

                                My report for today: I had .88 cup of pumpkin, 1 cup (130g) of jicama, 1 whole, yellow bellpepper (raw, cut into strips), and 4 cups of romaine lettuce. Total net veggie carbs = 26.

                                Keep up the great work, ladies! You're making me mighty proud.
