    Thanks, Jo and Mitzi, I've gotten rusty on Fitday - or maybe could not find it cuz I left out the space bockchoy bokchoy no good :nono:

    There's some really weird veggies out there, for sure! It will be tough to choose the new one for me, though - Last time (about a month ago) there was this really bumpy-looking thing at the International grocery store (waaaaay beyond super market!!!) that was really bitter tasting, when I prepared it as I would a zucchini.

      Oh, yeah! I've seen those, and wondered what in the heck they were. I still don't know... they were so weird looking, that I didn't find out... it looked like something that had been there too long. You're brave!

          Fitday sometimes frustrates me... so much so, that I have most of my foods entered as custom foods. Even a lot of veggies! It's a pain to have to sort through so many possibilities to find something that should be simple. So if I can't find something easy, I find info that I do like somewhere else and enter is as a custom food. I've gotten a lot of my info from that Spreadsheet I just posted about, and some from www.calorieking.com, among others. I also sat down with my laptop in the kitchen and entered info from every jar, can, box, label, of anything that I ever use. Yep, a big pain in the butt to do that, but after it's done, it really makes Fitday easier to use.


          OK, here's an example of something from Linda's website that I think is really very good. I've never used the ranch option... I alway use sour cream. Also, I've copied and pasted this from her site, along with the link, so there are nutrition facts listed that she provided. I don't usually just take the word of facts that are provided there... I plug my own food into Fitday, so I can't vouch for the accuracy of her facts.

          From Linda's website:

          Linda's Low Carb Menus & Recipes



          "LOADED" CAULIFLOWER
          1 cup cooked cauliflower
          1 teaspoon butter
          Salt and pepper, to taste
          1 ounce cheddar cheese, shredded
          1 tablespoon ranch dressing or sour cream
          1 strip bacon, crumbled
          1 teaspoon chives
          Butter and season the cauliflower. Place in an individual-serving baking dish, then top with the cheese. Microwave or broil until the cheese is melted. Top with ranch dressing, bacon and chives.
          Makes 1 serving
          Do not freeze
          Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs
          I wasn't trying to pretend that this was a baked potato, but I had the idea of topping cauliflower with all of the things that go on a baked potato. It was quite good.

          I like to stir up the concoction, so I can get a bit of everything in every bite. It doesn't look pretty like it does in the picture when I do that, but it sure is good.

            I've seen this stuff before and had no clue what it is! Now I'm trying to remember if I saw it in the US or here in Germany... but since I didn't know its name before, I probably saw it in Germany and had no idea what's written on the label.

            I need a weekend to try new recipes. Anyone willing to do my Astrophysics homework while I cook?

              First of all, here's my totals for Tuesday!
              Breakfast: Fried onions, mushrooms and tomato - 4.8gm net carbs
              Lunch: Burger with onions, salad of mixed greens, tomato, brocolli, cucumber - 10gm net carbs
              Dinner: Homemade green curry with green capsicum, onion and celery - 5.35
              Tuesday's Grand total = 20.15

                Good grief, you guys sure eat a lot of vegetables. Also, I was posting mine in the Journal stats so I'll cut and paste over here. Being in a northernish rural area, with the nearest city an hour and a half away, we are pretty much limited to "normal" vegies that most people will buy. I am also feeding my 2 men the same meals, so you will see a lot of salad, and winter vegies in my stats. I tend to go over the amount of the salad vegies, but as there's no carbs (hardly) in them, I try to use the second group at supper meals. Why Dr. Atkins put spinach in the second group instead of the first group of vegies, we'll never know. We eat a lot of spinach salad, using it to replace lettuce. Thanks for any help you can give me!

                breakfast - 1/2 cup rhubarb, stewed with diet Jello added, 3.2gms (FitDay)
                3 scrambled eggs, 1.17gms; 1 cup coffee (half decaf, half reg); cream, 1 gm.; & Splenda (1/2 tsp)

                lunch- iceberg lettuce, 1gms (Fitday) salad with 6 cherry tomatoes, 1.33gms; 6 slices cucumber, .62gms; 2 Tbsp ranch dressing, 2gms; and chicken breast, 2gms.

                snack- 1 oz kielbassa sausage & 1 oz cheddar cheese, 1gm. total

                Supper - 2c. spinach, 1.9gms; mixed with thinly sliced red onion, 0gm; mushrooms, .95gms; shredded cheese, 1gm; and grilled boneless, skinless chicken thighs, 0gms.

                total carbs - 16.6gms-5.3Fiber=11.3
                total vegie carbs - 9gms

                At this point I couldn't eat another bite, animal, vegetable, or mineral!

                  Ummm... I dont think you want me doing your Astrophysics homework... not if you want to pass, anyway.

                  Georgiana, you amaze me. You spend a ton of time here on the board, you take really, really hard classes for school, AND you can cook. Wow!! I can't do any of those things - I bow to you!

                      Yeah, I don't understand why spinach is on the "Other" list, either. I have a 6 ounce bag that I'll use as salad greens. Even if I eat the entire bag by myself (which I will), there is only 2 net carbs in the whole bag. Sounds like a low carb veggie to me!

                      Cherry tomatoes and onions are a quick and easy way to up those veggie carbs. And yeah, I have discovered that at each meal, I need to eat a majority of my veggies first, or I'll get too full off of the other stuff before I get to them.

                      That's one thing this challenge is great for - it brings an awareness to just how much food you can eat, when the majority of the carbs come from veggies.

                        It rained all day yesterday and my satellite internet was down when I tried to post so here are my totals for yesterday Monday the 4th.

                        Mushrooms in an omelette 4
                        Chop Suey veggies in a turkey stir-fry 10 (I had it for lunch & dinner.
                        Broccoli in the stir-fry 4
                        2 stalks of celery 2
                        Total 20 net carbs

                        Today I'm going to go down to the pond and pick some Catty-Nine-Tails for in my salad. The young shoots are delicious! They are similar to the green part of a scallion but with a much milder flavor so I will count the carbs the same as them.

                            Thanks for the great answer Jimmie. I did go to Fitday after reading your post and now post everything there. I also have my 2002 book so I've been right into that. I'm so glad this board is here, it really helps with menus, recipes and morale! I'm afraid my most fav thing to cook is homemade bread (from scratch) filled with flax seed, bran, wheat germ, oatmeal and whatever other grain I have at the time. But since I've always made my own bread, it isn't hard not to eat it (thank goodness!) and I can freeze it for guests. I must check Fitday to see if I can input a recipe, then I can find out the net carbs for the future. (more research comin' up!)

                                MMmmmmm - that Loaded Cauli recipe reminds me of a similar dish I do with Turnips...

                                I saw the Bitter Melon/Bitter Gourd at the supermarket yesterday - in the freezer section of the 'Authentic Foreign Foods' section.                                 The other veggies I looked at - apparently dhudi is similar to a courgette, but more bitter, tindori are similar to gherkins, (Tindori/Tindora -

                                Mitzi - I have been having a lot of rhubarb - as I grow it myself. I stew mine until soft and then serve it with greek yoghurt and a little splenda, for a dessert. Pre-Atkins I used to need loads of sugar with it, as it is a sharp flavour, but now I find I need only a small amount of 'sweetness' with it.

                                Will report in later with my figures for today.
