I'm so glad everyone seems to be enjoying them. Sorry Nursery, coconut and cheddar...OMG just the thought of that gets my gag reflex going! LOL ewww.

A tip for anyone who is skilled with using chop sticks, I use chopssticks to turn the tacos with, its just so easy to gently grab them by the edge with them and quickly filp them over.

I tried these, and they were really good...but I guess I didn't spread my cheese very evenly, because when I was eating it by hand, all the fillings (meat juice) was drippling all over my hands....So I ended up eating like a good girl....with knife and fork...

It does take a little practice to get them so they are smooth w/o little holes all over. I find it easier to do with the cheese finely shredded.

I did this recipe with venison fajitas as the taco shell stuffing. Awesome. I dry-aged four deer hindquarters this season before butchering them out and freezing them, and the flavor is just magnificent. I seasoned the dry aged venison steak strips with chili powder, black pepper, crushed red peppers and cumin, then stir-fried them with hot peppers. Topped with avocado slices, shredded lettuce and a bit of sour cream, they were fantastic.

Black soybeans either refreid or whole make a good addition to venison fajitas, but as this is my second go-round on Atkins (did an isocaloric/bodybuilder's diet for awhile in between), I'm not at the legume rung yet.

Let us know how they turn out Tokyo Joe!

Heidi, there is only one company that I know of that offers the black soy beans, I get them at Whole Foods here. I use them in my chili too! They are a little firmer than most beans but I like them!

Now I must make these again. They are delicious jcapulet (first name Juliette by any chance?) I have pre-made taco meat in the freezer too. (Pre-made by myself - just thought I should clarify that.)
