I made these last night, but it didn't come out anything like I thought it would. For one, my muffin pans were so small, so I had these little 2-3 bite flat muffins. Pau, when you made them, did you layer the ingredients? Your pictures make it look like each muffin is layered with the ingredients, which is what I wanted. Mine came out more like crusty scramled eggs. Not very good. :anger

I can get it at any of the big local grocery stores in the cheese department, maybe you could call and ask to save some time? They have it here at Harris Teeter and at Kroger.

I made a batch, and they came out yummy. A real nice change from the standard eggs! DH loved them, already asked me to make another batch.
They certainly are a big seller in our household!!!

OK, just made a batch of these to take on the weekend with us. They may not make it to the weekend! LOL! This is awesome Pau, thank you for sharing.
Mine came out flat, well they came out of the oven really puffy, but they fell flat in seconds. Is that normal Pau??
                      Thanks again!!

Can someone break down the amounts needed from the original recipe? for example, how many cups, teaspoons, etc?

Go by the ounces Pau listed, there are 8 ounces in a cup, 4 ounces in 1/2 cup etc

The comma's in the ounce measurements should be .'s not ,'s if that helps any. If you don't have a scale, you'll just have to guesstimate using measuring cups.

                            3 eggs
70 grs heavy cream (2,46 oz)
100 grs soft cheese (3,52 oz)
                            50 grs bacon (1,76 oz)
90 grs edam cheese (3,17 oz)
                            salt

Whip the whites and keep in the fridge.
Mix the yolks with the soft cheese, the cream, salt, grated edam cheese and minced bacon (I first fried it in a pan without oil).
Mix carefully the mixture with the whites.
Bake in oven, 20 minutes, 190ºC (374 farenheit)

                            Servings: 9
                            Total carbs: 8.5
                            carbs per each: 0.9

Well Pau says you can substitute Gouda, someone else made them with mozarella and Cmcole had these suggestions:

                                Gouda
                                Provolone

                                Cheddar

It's all about how you want it to taste, really.

I'd even try it with the smoked variety of Provolone or Mozzarella for an experiment.
