I just made some 'cheesecake bases' for the dessert I will be making tomorrow when we visit my mum.
Instead of making a large cake I used a 'yorkshire pudding' baking tray with 4 shallow rounds about 3" diameter and split the recipe between them.
I shall top them with sweetened greek yogurt (add splenda to plain) and a few halved strawberries (I am well past the fruit rung of OWL). My husband's favourite at the moment!!
Here is the recipe I used:
1 pack of Waitrose cream cheese (200g)
1 egg
1 T Davinci sugarfree vanilla syrup
1 T Davinci sugarfree strawberry syrup
2 teaspoons granulated Splenda (can leave out if you havent a sweet tooth)
If you cant find the Davinci then use 1teaspoon of vanilla extract and one of strawberry essence (or any other flavour) and increase the splenda to taste.
Mix together and pour into well greased/oiled baking tin
Bake at 175 degrees Centigrade for about 30 minutes or till browned.
To prevent the tops cracking you can put a baking tin or oven proof dish of water in the oven with it, but as I am not going to serve them 'naked' it doesnt matter if they do look cracked.
Let cool then top with sweetened yogurt (or whipped cream) and fruits if you are allowed them on your stage of Atkins.
No-one believes these are a 'diet' dish!!
