    Hi sorry to intrude in your thread, but I have to ask. We don't have canned pumpkin here, just the fresh stuff, but I just wanted to know, What flavour/type pumpkin can you get in a can? Does it taste good? and does it taste like the fresh stuff. I imagine it would be a huge time saver, Pumpkin in a can hehehe it intrigues me, lol.

      Sunny, I just love reading your post! They are a nice escape if only for a moment. I just felt like walking right into that field of green just to see what was on the other side of the mountain. Very Nice in Deed! Sounds as though you did well eating wise at church yesterday. I too, got a free range turkey this year. All Natural! The breed was a Heritage Turkey. It's not all shot up with hormones that influence the growth or shot up with anything as far as that goes. They have more darker of a meat. You'll notice with yours too that the flavor is oh' so much better. That is so neat that you too can go to the beach as well. Yes, I lived on the ocean a few times. Once in Alaska and then again here on our coast. The mountains would keep calling be back. I was born here in these mountains and I know them like the back of my hand. I guess I'll die here too. It's in my blood. Well, I just pulled your pumpkin bars out of my oven and have your wonderful cream cheese frosting made. The plan is to frost them and immediately put them in the freezer untill thursday. After reading what you said about liking them better when their frozen has already given me thoughts that they're not going to even make it to thursday.LOL I also made the pumpkin pound cake that Cat posted. It's coming out of the oven in just a few minutes. They both have filled my kitchen with such a wonderful aroma. I'm loving this! Thanks for the beautifu picture Sunny. Some day maybe I can return a picture to you. I'm very technically challenged so it won't be via internet, at least no for a while. Enjoy your evening hon and I'll yak at ya later.

        You know Kass, if I had my choices of cities where I could of grown up at, it would be San Franciso. I've been there several times and love it there. Sasaleto (sp) is one of my favorite places to visit at Muirs State Park with the Red Woods. I love walking through there. I love the beach up the coast line from there. I swam in the ocean there about 20 years ago. Very beautiful there. I enjoyed looking at all the vineyards in Napa valley on the drive down. It seemed that they would stretch for miles on rolling hills. Very nice. Everything in uniform. Each time I go back it seems like it gets bigger but there are places there that never change. That's right girlfriend, we have no excuses this holiday season. We're louded for bear. I'm eating a tossed green salad before I dive into the main course. It will help me to just take small portions of the meal. I made my desserts today. There in the freezer. Just knowing their in the there helps me stay strong. Like back up!           Your not intruding, heck, join in anytime! Everyone is welcome in this thread. We have alot of fun here and everyone is really supportive. I use Libby's canned pumpkin when there's no longer fresh pumpkin in season. I enjoy fresh pumpkin in season. In the off season I use canned pumpkin and find it delicious also. It would be a great time saver for you to have some on hand. You can make so much with pumpkin and it's legal all throughout the rungs. Hope that helps. Stop by anytime!

            LOL Leave it up to you to color-coordinate your siggy picture and rung icon! What are you gonna wear to match the starchy veggies rung??? I don't drink, either, and I'm not allergic to berries, but I love them too much to have control. Plus, all fruit, with the exception of a very occasional apple, shuts my weight loss down. I would hate to be allergic to fruits and veggies. I have gotten past mourning over being allergic to wheat and almost all grains. I might try beans soon--I miss kidney beans in my chili.

              Hey! You are not intruding! We appreciate you stopping by. I have relatives and friends in Australia and New Zealand. Right now, the regular members of this thread all live in the USA, but we love to have people from all over. I love to travel and learn about different people's cultures. When I can't actually travel somewhere, the Internet is the next best thing!

              We have just cooked and mashed pumpkin in a can, nothing added, and we also have pumpkin pie mix in a can--I guess you just add eggs and milk--I don't know--I don't like the pie. I'm going to try to come up with a savoury pumpkin recipe using canned pumpkin for Thanksgiving. I tried a fresh pumpkin last year, but it tasted bitter to me, so I gave the rest to the squirrels. Little buggars wouldn't eat it either! They liked the one I cut for a Jack-o-lantern at Halloween!


              Stop in again! Awesome amount of weight you've lost.

                Oh my gosh.... Look how you guys are doing. I have really missed you guys but I just couldn't seem to do this. I did stay on track however and the only cheat I have had is a piece of cake at my grandaughters 2nd birthday party. Didn't eat all of it as it didn't taste near as good as it looked.

                Glad you guys didn't move. I would have hated not being able to find you.... Even though I have stayed away for a while, I did think about you often.

                Cat: Glad to hear that your mom's home. I thought of you in the middle of the night as I found myself watching a infomercial about Turbo Jam. I am sorry to hear that you can't do this. (right now anyway.... what do they know anyway)

                Kass: Everytime I looked at something that I was not suppose to eat.. it must have been you that I heard.."I will not cheat... I will not cheat/. etc." Thank you for your long distance support. They told me these meds might make me hear voices.. thank goodness it was yours.

                Sunny: Glad to see you back, more than me lately.

                    I wish I liked pumpkin. I never liked pumpkin pie, so I never learned to eat it. I'm going to try making it with just some butter and maybe cream. I'm wanting it to taste like sweet potatoes, which I like if they are not candied. Don't like 'sweet' much, especially sweet veggies. I tried buying a whole small pie pumpkin last year--peeled and cut it in cubes, brushed it with melted butter and roasted it in the oven--YUCK! It tasted bitter! The only way I ever eat it is in those pumpkin bars.

                    Hey Sunny! Sorry for my late response. My life is so hectic. I'm having to drive here, there, and everywhere for my family (but they're worth it). I didn't get home tonight until 8:30. I'm so worn out. I didn't eat that many vegetables yesterday or today. TOM is here but it's way worse than for most people. I have Endometriosis and a fibroid tumor so this time of month is pure torment. Between the cramps, extreme fatigue, and nausea....I just don't want to eat. I'll do better when TOM leaves.

                      Hey Coolabahdee! I don't know about flavors of pumpkin. I get Libby's 100% Pure Pumpkin. I don't think I've ever had fresh (straight out of a pumpkin so I wouldn't be able to tell you if it tastes different). I mix it with heavy cream, butter and Splenda. Yum!!

                          Yay Marty, you're back!! Hooray!! Hey Sherri and Kassoria!! Ok, Sherri....tell me. How is the pumpkin pound cake? Did you taste it? I don't have any almond flour and you can forget me finding it in my small town (even though it's the capital of Kentucky). Do you think soy flour will work?


                          Today I had celery with cream cheese & bacon for breakfast; chili for lunch; pepperoni with cheese for snack & two jr. bacon cheeseburgers from Wendy's with a side salad & ranch dressing. Water intake only at 55 oz. I will do better when TOM leaves. It really is a pain.

                            Nope. That stuff is nasty, anyway. If you have a food processor, you can make your own. Even a coffee bean grinder. Just buy almonds and grind them until they resemble flour. I actually use pecan flour that I get at an Amish bulk foods store. It works fine. You should have a Whole Foods nearby. They have a lot of these kinds of flour.

                            I made a bread today that I found on Linda's Website with almond flour and it turned out awesome. The closest to bread texture of all the recipes I have tried. I had to put it far away to keep from eating too much. I even put stuffing type of spices in part and I think it will make great stuffing for Turkeyday.

                            Here's a couple of pictures. The large one is from the regular recipe and the small round one is with the stuffing spices added (sage, parsley, garlic & onion powder, paprika). The recipe is called Artisan Mini-loaves, only I baked it in one 8x4 inch loaf pan instead.





                            I'm so excited about Thanksgiving this year!

                              The pound cake is delish. I put 1/8 of a tsp. of salt in it and it's just right. It's nice and moist. I made extra cream cheese frosting so I had some left over from the bars and the frosting is real good on the cake too. YUMMO! First I had some of Sunny's pumpkin bars (one fell apart so I had to eat it)LOL! and they are wonderful. I can see how I could get carried away on both. There both in the freezer now! Very delicious indeed. Cat, you can use soy flour. When I use soy flour I like to use 1/2 soy flour and 1/2 flax meal. The flax makes it heartier, But if you don't want to use flax, the soy alone should be fine. I make my zuchinni bread with soy and flax. It's really good! Hope that helps hon.

                                Those squirrels are so cute Sunny! We have squirrels here too. I almost got knocked out by a squirrel once. I was camping up in the high lake region and sleeping under a tree. I woke up to a squirrel throwing pine cones down at me. After I moved to get up to see what the heck, He ran down the tree and ran to another tree to climb up it. Boy he was really giving me a what for! Very funny! Loved It! Today for my menu was--Breakfast- 3 egg, turkey ham and ch omelet. Lunch-- salad. Dinner- atkins meatloaf, steamed yellow squash, green salad w/ ranch. Dessert- 1 square pumkin bar, 1 thin slice pumpkin cake & crm ch frosting. Lots of water, about 100 oz today.
