    Whew! Thanks Sherri! I am PMSing and I know that is adding to my sensitivity. I guess I just felt like that thread was like an insult to us. Why discuss us in another thread? We've not done anything to them and if our thread is so offensive, why do they keep reading it? Ok, I'm off my soapbox now. I don't like PMS. It makes me too emotional.

      Purple--I've been there when the docs and PT told me I would never walk again, wouldn't walk without a walker, wouldn't walk without two quad-canes, wouldn't be able to exercise again, even aquatics. I accepted that for too long, then I rebelled and threw away the canes and started doing all that stuff. I got up to walking for 45 minutes, lifting weights and using my recumbent stepper. I am now not allowed to exercise because of issues with my cervical spine, but I am going to start back shortly. My doctors just shake their heads at me walking without any kinds of aids! If you are determined, you can find a way to exercise. You will find a way to do it safely. It's okay to have a pity party here among friends. We will cheer you back up! You know you can't stay down long!

      Thank you Sunny!! I apologize to everyone for being so emotional. I had sent a message to Elizellen to ask to move but sent a second one telling her that we've decided to stay put. This is my second time doing Atkins as is for most everyone on this thread and thus why I thought this forum would be most appropriate to move to. I just didn't realize I'd be met with insult.

      Thank you so much for your encouragement. You are truly an amazing inspiration. I don't want to give up the thought of not being able to exercise like I want. I truly LOVE exercise. That PT just doesn't understand what a major funk he threw me into with that statement. However, after my own little pity party I made an executive decision to either feel sorry for myself or do what I can with the cards I've been dealt. I chose to do something. I'm riding the exercise bike every other day for 5 minutes a session (not a lot, but a start). I'm also doing strength training with a stretch band (15 reps high, 15 reps low). Then I end with stretching exercises. I found this ball on Amazon that was invented by a dancer (Elaine Petrone) that is supposed to help with the back. Here's the link:

        Thank you Sunny for being you hon! I like coming here too. It's a great group here that are so supportive. This is my second time around and innitially losing 155 lbs. all together I would like to pay it forward to those who care and you all care. This place has a great vibe. That's what keeps me coming back. It's kinda like coming home and kicking your shoes off and letting your hair down. I like that feeling! I've decided Cat, and everyone, that i'm going to start posting my daily menu here again. It gives everyone ideas and reflections throughout their journey. What do you think? So here goes my menu for the day. Breakfast-2 eggs w/ 4 slices bacon, decaf w/ cream. Lunch- stir fried vegies. Dinner- roast beef, steamed fresh zuchinni, green salad w/ olives, cucumber and ranch. No snacks in between meals or after dinner. Lot of water throughout the day. 4th day that I've stayed on track and feeling most excellent!

Maybe someone can gently inform them about why we are here so they are no longer confused.             I'm thinking the same thing. We should take the high road and explain what this thread is about. We are all in this together and I don't want in-fighting to add stress to our lives. I come here to get away from the stresses of the real world. We don't always have to agree, but we need to respect each other's opinions and differences.

              You all are so amazing and so awesome!! Yes, Sherri, that's a great idea. I had stopped posting my menus and I need to do that...it will keep me on track.

              So far today I've had 3 slices bacon and 2 eggs with 1 tbsp heavy cream (so light, fluffy, and yummo!!)).

              I truly love you guys.

                Awesome idea!! I'm here to check in for the day. However, I'll be back later!! I'm doing grocery shopping today to prepare for Thanksgiving. I found a recipe for a Pumpkin Bake that I want to try. I'm going to try not to go overboard. I don't want to gain this weight back.

                  I agree Sunny! I don't want to fight with anyone! My feelings were just hurt yesterday that we were being discussed in another thread when we'd done nothing to these people whatsoever! I'm over it now!! I come here because I so enjoy talking to you all. I work in such a stressful environment (processing disability claims) that this is my little bit of peace throughout the day!

                    Looks like we're all on board to stay put! Yay! Catrinia, please share your pumpkin bake, i'm interested. Hey here's another idea. When everyone knows what they're serving for thanksgiving dinner lets post it. It will give us some more ideas of what to serve. Thanks

                      Where are you guys on the carb ladder??? Anybody still on induction? It makes a difference on which recipes we should post. I've been at this WOE for over two years and have been up and back down the ladder 40 times, at least. At this time, I am not just eating nuts out of hand (have no control), but I am putting them in recipes, like the Pumpkin Bars with Maple Cream Cheese Frosting--It uses almond flour and has chopped walnuts. I also just made a really good dip to eat on pork rinds and it has walnuts, as well. It's a tuna dip with cream cheese, thyme, black olives, walnuts and some other stuff--it's really good.

                      I know I'll be making Just Like Stuffed Baked Potato made with cauliflower. It's awesome. I will probably go over my cheese and nut allowance for the day, but all the food is Atkins legal. It's all really filling, so portions will be small.

                      I've made it through all the holidays just fine the last two years, and I know I can do it again this year.

                        Hi Sunny, I don't think any of us are still in induction, I'm in the nut rung myself. Those recipes sound awesome. I, like you, have been doing this woe for 3 1/2 years and have been up and down the ladder a few times. I don't eat nuts for snacks but enjoy putting them in recipes. It's easier for me to stay in control when it comes to nuts. We all know how easy it would be to eat more than one serving with nuts. I've been posting recipes in the recipe thread for a while now for all rungs. I figure eventually everyone will get to use them when they reach that rung. I write down recipes even if I'm not in that rung because of that. Please post your pumpkin bars w/ maple, cream ch frosting. Yummo! Actually, I'm interested in all of what your having . What time is dinner? LOL I just posted a pumkin pie recipe w/ pecan praline crust if anyone is interested. Thanks Sunny!

                          I am eating extra vegetables. But still feels like induction. I will probably add nuts soon.
                          About Thanksgiving:
                          I have to cook for other family members also. I love yams. I hate canned yams. I can tell the difference...don't care how they are "hooked up". So I have decided to make canned yams for Thanksgiving because I will not eat them. I am also making stuffing in the box...hate that too.

                            Hmmm...how 'bout the main course at my house in the beautiful Shenandoah Valley, at the foothills of the Blue Ridge Mountains and then dessert at your house in Oregon! I want to get to Oregon before I die. The closest I've been was when I had a layover at SeaTac on my way to Vancouver Island--I know--not that close.

                            I made the pumpkin bars tonight because I had to make high carb pumpkin bars for our Thanksgiving lunch at church tomorrow. One can of pumpkin comes out to the exact amount for both recipes. They freeze really well, so I'll cut them up and freeze them individually tomorrow.

                            Pumpkin Bars with Maple Cream cheese Frosting




                            Mix:
                            1 cup almond flour
                            1 teaspoon cinnamon
                            ½ teaspoon ground cloves

                            ½ teaspoon ginger
                            ¼ teaspoon salt
                            ½ teaspoon baking powder
                            ½ teaspoon baking soda
                            24 packets Splenda (16 tablespoons) (or ½ cup DaVinci SF syrup and 6 packets Splenda)

                            Then mix:
                            1 cup mashed pumpkin
                            2 eggs
                            ½ cup oil

                            Mix dry into wet and pour into sprayed 9x13 inch pan. Bake 350 for 30-40 min. Let cool then frost. Really good next day!!! If they last that long!!!

                            Cream Cheese Walnut Frosting

                            4 oz softened cream cheese
                            2 tablespoons softened butter
                            2 tablespoons cream
                            1 teaspoon maple or walnut extract
                            1 teaspoon vanilla extract (or 2 teaspoons vanilla)
                            6 packets Splenda OR SF vanilla syrup to desired taste and consistency.
                            3 tablespoons chopped walnuts

                            Mix all together till smooth then add 3 tablespoons chopped walnuts and spread on bars!

                            18 bars at roughly 3.5 carbs each and 2.5 if you use the DaVinci and Splenda.

                              That's a great menu Kass. That's great that your preparing foods in ways that you won't be tempted, KUDOS. Sounds like your determined to stand strong on the cocktail also. Just don't have it available in your house so it makes it easier for you to follow through. Are you doing any shopping on friday? Sales, Sales, and more Sales. Hehe. Happy Sunday to you Kass. So proud of you Kass. Your doing most excellent. We'll be stepping into the New year with our heads held high for losing those pounds over the holidays.

                                Thank you Sunny for posting the recipe. I have it written down and will be baking them this week. Main course in the Shenandoah Valley, at the foothills of the Smokey Mountains sounds lovely. I've never been, but have been near your neck of the woods when I traveled by train to New York City. Very beautiful Country. I live in the Southern Oregon Cascade Mountains near the deepest lake in the nation, Crater Lake. It too is very beautiful here. Hope some day you are able to come visit. My home is nestled in the mountains amongst tall cedars. When you walk out my door, all you smell is cedar. It's so quite at night that you can hear a pin drop. On the menu at my home this year is---Turkey, Gravy, made from the drippings and arrowroot to thicken it, Fresh Steamed Green Beans, Cheese Cauliflower, Fresh Cranberries made with splenda, Cheese Popovers, deviled eggs, stuffed celery, black olives, Kassorio's jello & cream cheese mold, stuffing and mashed potatoes for the family. Dessert is pumpkin pie, blackberry pie and Sunny's pumpkin bars. That oughta do it. Dinner is at 3 p.m. and you're all invited. I know you can't make it but the invite is always there! We have no family left. I have a brother but he spends holidays with his inlaws. So it's just us three every year. There's always tons of food left over so we'll be eating on it for a while. O.K with me. It gives me a break from cooking.
