      I have a turkey breast in the oven baking with herbs. On top of the stove top cooking is fresh green beans, bacon, garlic cloves & onions. Eggs are boiled for deviled eggs. Stuffing some celery with cream cheese. A side green salad as well. That ought to do it! YUMMO!

          It's "Crazy Pasta Dinner" at the cafeteria , so I'm cooking tonight. I'll have guacamole on cheese crackers (yes, I'm lazy ) and grilled chicken breast with mushrooms.

            Scattered sushi low carb-style

            I'm replacing the rice with "rice" made from grated cauliflower and yellow summer squash. And I don't use "seasoned rice vinegar" because the "seasoning is salt and sugar. But instead, I toss the cauli with alittle rice vinegar, just until it's tart enough but not too tart.

            And instead of fish, I have shrimps and crab meat.

              It was 'let's see what is in the fridge' night tonight

              I had a few chunks of leftover chicken tikka and some cooked bacon as well as half an avocado which was too unripe for my hubby to eat the other day and got wrapped up to use as leftovers.

              So I heated up the meat and scattered it over the avocado and some lettuce. Really yummy and filling
              Wondering how to get 'most' of your net carbs from your induction veggies?

                  I had hamburgers with all the trimmings (veggies) and no bun, of course. Pretty darn good. Didn't have much in the way of extra veggies, though. Have to do better about that.

                  rung 1 - more veggies
                  rung 2 - dairy (some milk in coffee)
                  rung 3 - seeds, nuts (mostly sprinkled on salads)
                  rung 4 - berries, melon
                  rung 5 - wine -
                  rung 6 - beans, hummus
                  rung 7 - other fruits
                  rung 8 - carrots/ potatoes (nah, prolly not)
                  rung 9 - whole grains (fresh Dutch breads...)
                  Major Goal - 128 lbs/ healthy range
                  (on to pre-maintenance)

                    Okay, it turned into Spain and Japan night for dinner. During my afternoon break I ran down the street to the supermarket to buy olive oil and bought some tomatoes too.

                    So in addition to the scattered sushi, I'm having gazpacho from a recipe by Chef Jose Andres! I posted the recipe in the Side Dishes Recipe Forum, because that gazpacho is simply the best gazpacho I've ever had! Usually gazpacho tastes like either bad V8 Juice or mowed grass, but not this one. PLUS it is Induction friendly, requires no cooking whatsoever and is fast. I stored the leftovers in a glass jar in the fridge and will have that for lunch tomorrow. It's definitely a keeper recipe, imo.

                                Mayo thinned with a little water ( mom used milk growing up) a very little bit of splenda ( i use liquid, so one drop will do or just omit) , salt, pepper. She used to make a simple salad of just lettuce, onion, cuc's and tomato, and it is the best easy salad. Maybe those are just my own fond childhood memories LOL. But this reminds me of that. I love BLT's and if i make them for my kids, I do not feel left out, the bread actually hides the flavors.
