For dinner last night I started off thinking I was going to stuff some chicken breast with cream cheese and spinach then wrap them in bacon and fry them in a skillet...it was a mess. So I changed it up at bit.
I fried up some chips of bacon, took the bacon out of the skillet, seared salted and peppered chicken breast in the bacon grease, put them in a casserole dish, and topped them with a mixture of 12 ounces of cream cheese, chopped spinach, chopped fresh parsley, chopped green onion, and the chips of bacon. I baked them for about 45 minutes to finish cooking the chicken....oh my heavens...soooo yummy! Since I coked 10 chicken breasts, each one had less than 2 ounces of cream cheese. I wanted to skip my breakfast this morning and go straight to leftovers.
