    For dinner last night I started off thinking I was going to stuff some chicken breast with cream cheese and spinach then wrap them in bacon and fry them in a skillet...it was a mess. So I changed it up at bit.

    I fried up some chips of bacon, took the bacon out of the skillet, seared salted and peppered chicken breast in the bacon grease, put them in a casserole dish, and topped them with a mixture of 12 ounces of cream cheese, chopped spinach, chopped fresh parsley, chopped green onion, and the chips of bacon. I baked them for about 45 minutes to finish cooking the chicken....oh my heavens...soooo yummy! Since I coked 10 chicken breasts, each one had less than 2 ounces of cream cheese. I wanted to skip my breakfast this morning and go straight to leftovers.

      that sounds excellent!

      Tonight I'm making my portabello hamburgers - I just make a burger with onion, mid-way thru cooking add portabello tops to pan [with oil or butter]- put burger on top of mushroom, add swiss - maybe tomato - top with avocado/mayo dressing - soooo good. I just got done eating my leftovers from last night, broiled chicken with mashed cauliflower - man I love this food!

        Last night I had leftover kielbasa (lite) over a bed of sauteed peppers and onions, topped with 1.5 oz mozzarella cheese... SO GOOD. I also had roasted cauliflower tossed in olive oil and sprinkled with parmesan cheese. For dessert I had my egg white shake with cocoa powder. Oh my.

          I shredded zucchini and used them as mock noodles with hamburger, garlic powder, a tiny bit of diced onion. I made a cream sauce with a little butter and cream cheese. It was delicious!

              Day 4, it was Grilled chicken based with greek yoghurt and tandorri spices, shredded lettuce with grated cheese and a little mayo, for dessert it was a sugar free UK jelly (jello US I think!)

              Just need to get some more water down me

                Greek yogurt (or any other yogurt) is only allowed from OWL Rung 2 on. I think you could substitute it with creme fraiche in most recipes.

                And be careful with the jello if it was sweetened with aspartame. Aspartame was considered by Dr. Atkins a possible staller, so he told us to avoid it. As an alternative, you could make your own with unflavored gelatin and a "legal" sweetener.

                        Tonight I made homemade chicken soup with a whole chicke, salt, pepper, celery, onion, parsley, and diced pumpkin. The pumpkin tasted like potatoe....It was quite yummy!

                          Tonight I made Steak-Umm Bracciole. I haven't had Steak-Umms probably in decades but noticed them mentioned over on Linda Sue's recipes. My local market had a BOGO sale so I picked up two boxes. They are a very good quickie staple for low carbers...the only ingredient is: Beef and they cook up very quickly. The Steak-Umm site has lots of recipes including a low carb rollup which looks interesting. Quick steak and eggs is also appealing.

                          OK, back to the bracciole. These are little tasty Italian rolls of stuffed beef. I seldom made them because of all the work slicing the beef roast thin and pounding it. The Steak-Umm version was easy and pretty tasty. I made a half batch of their recipe (above) but I put only a pinch of Italian seasoning (oregano & basil) in the filling mixture. I then put probably 1 tsp. of it into the sauce. Served the bracciole with French green beans (the skinny green beans) although julienne zucchini would be nice too.

                              Ribeye for dinner, and cube steak before bed time!. I'm not in the mood for carbs today. I did eat veggies for lunch, though.

                                Made a salad of chopped chicken breast, cheese, sauteed green pepper and onions (in olive oil). Mixed together and it tasts like fajitas. Would have also added some sour cream, but I am out of it. Yummm. Even a very picky five-year-old little girl likes it!
