      p.s. I make the soup part the night before so the flavors can meld and then added the fresh seafood to the reheated broth and simmered until seafood was done.

          Have not seen this thread updated, and I love to see what others are eating.

          I am having Beef Stroganoff" (ground round, onion, beef broth, cream cheese, sour cream) and a brocolli crunch salad.

          I'm on day 6 of a re re start with my husband, and things are going great. Lost 6 lbs so far, but my official weigh in is on Wednesdays.
          Re re starting this time for good with the support of my husband. He is doing this with me.


          Jan 25th Start Weight 228.6
          Feb 25th 221.6

          Slowly but surely

              No recipe...I winged it. I was in the fish market that day and inspired by all the fish that just came in. Bought a small amount of each of those items and as I remember, looked online for Cioppino recipes to come up with the broth. All I can remember about the broth is that I couldn't use wine in it at that time. Used a TBS of red wine vinegar instead.

              Sorry I couldn't be more help.

                        Last night I made

                        Chicken breast cooked in olive oil and butter with some minced garlic, cayenne pepper and onion powder. Once the chicken was cooked I threw a handfull of mushrooms and some more garlic and butter and sautee'd that until the mushrooms were soft and spooned it over my chicken.

                        On the side I steamed some brussel sprouts in salted butter for 15 mins until they were soft and then I roasted a couple of spears of asparagus with olive oil and shallots.

                        Tonight I am making full out beef stew for the family since it is cold and snowy.

                        For me I took some of the stew meat and put in a pot with some homemade beef stock and spices and I am braising that until it is tender. I will throw a handfull of mushrooms in towards the end. With that I plan on roasting some green beans with olive oil and shallots and lots of black pepper and a dash of salt.

                          That's close to what I made last night.
                          Sauteed:

                          Onion
                          Mushroom
                          Red Bell Pepper

                          Later Added:

                          Raw Chicken Breast cut into thumb size pieces


                          After Chicken Almost cooked through, added some fresh spinach.
                          After spinach wilted (a minute or two) added a touch of:

                          Salt and Pepper
                          Less than a tsp of Low Sodium Soy sauce

                            I am new here and trying really hard to do this right. Last night my family ate pretty much the samething except I made rice and baked beans for them as well.

                            Tonight I am making 2 dinners since I can not eat stew the way I cook it so I just readjusted a little bit and I am going to have what I think is actually a better dinner than stew. I love roasted veggies.

                            This morning I had a small mental battle. Since my family is home today because of the storm I made coffee and cinnamon rolls for them. I "thought" I wanted a roll but told myself my 2 weeks are almost up and I made it this far and I didn't have a roll didn't even sneak a bite. Instead I warmed up my chicken and a couple of brussel sprouts from last night and ate that mid morning.

                              I made Dana Carpenter's version of Costilla de Puerca. Cut up baby back ribs stewed in some onion, bellpepper and diced tomatoes. Having it over 1 cup of salad for lunch.
                              Dinner will be halibut in olive oil with riced cauliflower mixed with mayo, bacon and tomatoes.

                                I saw this yesterday on the Today Show. Had it last night. So simple, quick and absolutely DELICIOUS!!

                                Sautéed Chicken Breasts with Dijon Herb Sauce



                                Servings: 4 Difficulty: Easy Cook Time: 1-30 min

                                Four 6- to 8-ounce boneless, skinless chicken breasts
                                1 teaspoon salt
                                1/2 teaspoon freshly ground white pepper
                                2 tablespoons olive oil
                                2 tablespoons chopped shallot
                                1 cup dry white wine
                                1 tablespoon Dijon mustard
                                1/2 cup heavy cream
                                1 teaspoon chopped fresh tarragon
                                1 teaspoon chopped fresh parsley

                                Season the chicken on both sides with the salt and white pepper.
                                Heat the olive oil in a 12-inch sauté pan over medium-high heat.
                                Place the chicken in the pan, and cook until golden, about 4 minutes per side.
                                Increase the heat to high, add the shallot and white wine, and cook for 4 minutes.
                                Remove the chicken and set it aside on a serving plate.
                                Whisk the mustard and heavy cream into the pan, and bring the sauce to a boil.
                                Then reduce the heat to medium and simmer for 2 minutes, until thickened and bubbly.
                                Add the tarragon and parsley, and remove from the heat. Spoon the sauce over the chicken, and serve immediately.

                                Prep time: 6 minutes Cook time: 14 minutes Total: 20 minutes
