    I had 2 extra large boiled eggs and 2 cups Calabaza pumpkin with 1 tbspn butter for breakfast.
    Lunch is 5.5 ounce boneless/skinless chicken breast, 8 ounces shredded cabbage, 5 ounces red bell pepper, 2 tablespoons mayonnaise.
    Snack is 2 extra large boiled eggs

    This puts me at 1166 calories, 55% fat, 15% carbs, 30% protein (57 total carbs - 20 fiber = 37 net carbs so far today)

    I haven't decided what dinner will be yet, but 3/4 of my plate will be veggies, 1/4 of it protein, with fat as my condiments. I'll need minimum 700 calories at dinner time.

      At minimum, you need to be eating 1839 calories a day. That's just to keep you going while eating, sleeping, and digesting--your BMR. I don't know what kind of exercise you're doing, but start eating at 1800 calories a day and go UP from there.

      As for getting your calories up--fatty cuts of meat. Chicken with the skin. Chicken wings are very popular in the states and I just love them. Fatty cuts of pork, cooked until the fat is crispy...mmmmm, yum! Be liberal with your oils, butter, mayo and other fats. Do you ever measure stuff like that? When I really started exactly measuring out tablespoons, I was SURPRISED how much a tablespoon is.

      I fry most of my veggies in olive oil and butter. Makes them super yummy. I mix mayonnaise and cilantro or mayonnaise and horseradish to make dips for my meats. I frequently use mayonnaise as a salad dressing too.

      I do check everything that i buy, i annoy everyone with my obsession with reading labels

      I dont drink anything other than water, well... wine and club soda on a weekend... but I dont drink anything else.

      Maybe im measuring wrong, well i dont measure, i liberally thrrow it in the pan, i cook in a lot of oil and butter but we dont eat all that, somes left in the pan so how do i know exactly how much of it i'm eating?

      I think i need to start fitday'ing again... make sure im getting my calories right.

        Today's menu:

        B: 1 large egg with mayo, 1oz cheddar cheese & decaf with cream & splenda
        L: Big, multi-veg salad & 1 chorizo sausage
        D: TBD. Likely another big veggie mix and a burger patty or somesuch. I will be on the road, and fast food may end up being all that's easily available.
        Snack: 1 oz cheddar and decaf

        Currently fat: 73%, carbs: 7%, protein: 20%
        Touch low on calories, but only a touch. I may up my salad dressing slightly.
        No exercise, but a) it's raining and b) I have to maintain some sort of coiffure for tonight.

        Tonight I have the first of 3 job interviews this week. Butterflies in the tum! I hope that they are low-carb!

          Pre-Breakfast - Atkins Chocolate Royale Shake

          Breakfast - MUP with almonds

          Lunch - 1/2 bag (6 ounces) of broccoli slaw with mayo, vinegar, and Splenda

          Snack - 1 serving of sugar snap peas; 1 ounce cheddar cheese

          Dinner - Went out to eat at a local restaurant and had a large grilled shrimp salad (mixed lettuce, cucumbers, tomatoes, cheese, grilled shrimp, their homemade olive oil/green onion dressing) YUM!

          I don't feel like trying to guestimate the salad into Fitday, but prior to dinner I had 1003 calories and 29 net carbs (18 of those net veggie carbs).

            Julie - I considered that, but upon thinking about it... I didn't really taste much of a difference between the full-fat and the low-fat. I think I didn't enjoy it much for a couple of reasons... (1) I have gotten very used to having nothing sweet except my MUP, and maybe my tastes have changed with regards to whether I like sweet very much, and (2) I think that I feel guilty eating it. Actually, the second reason is probably the strongest one. I have been in weight loss mode for so long, that it feels funny to eat things that I know will stall me. Maintenance is going to take some "head straightening" for me. It's hard to shift gears!

            Hey, you are eating a butt-load of veggies! And I just read in your journal that your tummy hurts... but you said it felt kinda like food poisoning? Yikes... hope you get to the bottom of what is making you feel yucky.

              Yep, I'm trying to eat vegetables since I feel like there's nothing else I can eat.

              I cut out whole grains, fresh dairy, fruits (other fruits because of cravings, berries/melon because of seasonality) and alcohols (until THanksgiving!) so that's what I'm left with. So I eat lots of veggies, some starchy veggies, aged cheese, nuts, a very limited amount of legumes, fats and proteins. At first, I dropped 6 pounds of what I'd been holding on to! Then, my weight climbed back up, reaching a recent high of 175.5 and I'm very confused. Survey says, it's muscle. But it's still disheartening to GAIN weight after dropping the "fun" foods from my diet. We shall see what happens, huh?

              Breakfast: 1 oz. mozzarella, 1 small bunch of celery with 2 tbsp peanut butter

              Lunch: 6 oz. turkey, 2 cups sugar snap peas with 1/8 cup dill dip, 1 oz. mozzarella

              Snack: 1 small orange bell pepper, 1.5 cups green beans

              Dinner: 6 oz. grilled chicken breast, 2 cups string beans

                Breakfast - 2 slices of corned Beef

                Lunch - 2 cup lettuce, .5 cup tomatoes, .5 cup onions, tin of Tuna, 2 hardboiled eggs, 1 tin of tuna 2 tablesoons Mayo

                Dinner - cracked pepper rump steak with 1 cup mushrooms 1 cup green beans and .5 cup onions fried in butter

                Snack - if hungry - chicken wings

                  Julie, what's in this dill dip I keep seeing you guys eat? Is it something you are making from scratch or is it.......A processed food with wierd ingredients made in a lab??

                    Hey, All!

                    Julie - how frustrating. It looks like you are just as clean as you can be with that diet. That's pushing low cal and low carb, not to mention all the exercise you are doing. You have to see some results soon.

                    Yesterday worked well for me, so I am repeating the same thing, basically:

                    Break: HB egg chopped with mayo, 1 oz cheddar cheese, decaf with cremora & splenda (no prior issues with the cremora - I will monitor)
                    Lunch: Mixed salad/veggies with blue cheese dressing. Chorizo sausage.
                    Dinner: Cheese Burger patty or two hot dogs (if I can get home in time) and mixed veggies stirfried in butter, with a little salsa on top.

                    Snack - decaf w/ cremora/splenda and 1 oz cheddar
                    Stats: Calories: 1203, Protein: 17%, Carbs: 13% and Fat: 72%

                    Too many veggies, not enough protein methinks. I don't like the processed/fast food element, but until this week is over, I am kinda stuck. The veggie mix I am using also has edamame in it, so it's not completely rung 1 friendly and I may have to toss that out if I don't see some motion this week.

                    One interview down, two more to go. One tonight and one tomorrow morning. I feel really excited to be getting so many calls, but the stress is killing me!!

                      Joy, you are right. It *is* technically processed crap, although it has no preservatives or anything. Tasty processed crap. I have eaten salad dressings with the same ingredients and from the same company with no problems in the past, so I figured the dill dip would be OK too. Perhaps it's another food going crazy on me.

                        Oh but wait...when dropped whole grains from my diet and lost those 6 pounds, I'd been eating dill dip during that time. Perhaps it's something cumulative...

                          Nah, if you ate it during a phase when you lost, then you're probably okay with it.

                            Heck yes I am. My BMR is just shy of 1600 calories...something like 1593. I generally eat 1800-2000 calories...some days higher, but rarely lower.

                            I eat butter with my veggies, mayo with my cauliflower, ground beef, cheese, nuts for those calories. I probably eat too much cheese? But it's aged cheese, and I don't know what else to eat to get calories...
