Ooooo, I miss borsht!!
Mr. Ski is Polish & I am Lithuanian so we used to have it a lot. The good thing about homemade versions is that it doesn't have all the sugar (or artificial sweetener) of the jarred versions.
My grandmother used to put shredded carrots in for sweetness (she did that in tomato sauce instead of sugar too).
Was it cold or hot? Love it both ways. Some diced cuke and a little dill is great in the cold (blended w/sour cream) versions. We used sour cream in both the hot and cold borscht...blended in for cold and a dollop on top with the hot. Wondering if the sour cream adds to the fat content lessening the soups carb impact (or maybe I mean glycemic load?).
This is one food that I do miss a lot. I'm a long way off from that rung though.

Melted the cheese in a saucepan for the shell, and filled with taco-seasoned ground beef, mild salsa sauce and shredded cheese. Haven't had those in a long time!

They were very tasty though. I picked them out and ate them one by one.
