    Ooooo, I miss borsht!! Mr. Ski is Polish & I am Lithuanian so we used to have it a lot. The good thing about homemade versions is that it doesn't have all the sugar (or artificial sweetener) of the jarred versions.

    My grandmother used to put shredded carrots in for sweetness (she did that in tomato sauce instead of sugar too).

    Was it cold or hot? Love it both ways. Some diced cuke and a little dill is great in the cold (blended w/sour cream) versions. We used sour cream in both the hot and cold borscht...blended in for cold and a dollop on top with the hot. Wondering if the sour cream adds to the fat content lessening the soups carb impact (or maybe I mean glycemic load?).

    This is one food that I do miss a lot. I'm a long way off from that rung though.

      Thanks for the carb info Liv. I only ever had borscht once and loved it. Would love to try to make it but sadly, beets are hard to come by where I am.

        I made the White Bean Soup from Linda's site. I used ham in it. It was great! Next time I think I would use half of the beans (half of a can). A whole can seemed to be a lot to me (and more carbs).

          Ham and bean soup sounds great.

          Pumpkins are so cheap now. And so big Anyway cut one up and made pulp to freeze for odd things. (and also made a snack with the pumpkin seeds - I love roasted pumpkin seeds) So today I made pumpkin smoothie. I like to have a shake after running and this one was pretty good. I am not good at recipes - I throw things together But it was around 1/2 cup pumpkin, 1/4 cup cream, almond breeze, cinnamon, torrani caramel sweetener, 1/2 scoop of protein powder and a big hadful of ice cubs, little bit guar gum to thicken it a bit. Blender and that made for my lunch.

            That pumpkin smoothie sounds tasty liv.
            I had no time to cook after doing the weekly shopping and it was take away day so I had a roasted spicy whole baby chicken with salad.

              Yesterday evening my MIL cooked poached mackerel. I was not enthusiastic, until I tasted it. Wonderful... served at room temperature, with EVO, lemon juice and mayo.
              In the past I've always roasted or grilled mackerel, but these were great just poached.

              Veggie was escarole tossed in the pan with the usual sautè of EVO, garlic and chili... and at the end tossed in a few capers.

                  I said I was going to make meatballs but tried the Lindas cheese and onion quiche and I must say it was lovely I added some green peppers too.Going to make it again and add some cooked meat next time even delicious.Loved the crusty cheesy taste like pizza topping.

                    Tonight was a minestrone soup using up a bunch of odds and ends I had in the fridge & freezer. Started with a couple of hot Italian sausage links (removed casings and browned the loose meat, drained fat and added Rachael Ray's Beef Stock in a Box, some canned diced tomatoes, celery, onion, garlic, red bell pepper flakes, chopped frozen spinach, leftover broccoli chopped up smaller, Italian green beans, zucchini and some red kidney beans. Spices were a couple shakes of oregano and basil and some freshly ground black pepper. Served with some freshly shredded parm on top.

                    I love leftover soup creations!

                      Last night I had prawn cocktail then a steak with melted cheese and grated black truffles. Veggie was tossed wild "cicoria" ... (not sure if that translates to chicory... it's like a kind of less watery spinach).

                        Today it's my 2nd day of trying apples. For lunch I'll have salmon and a salad with arugula, apple, walnuts and Gorgonzola.

                          Oh Georgiana that sounds wonderful! Dinner here tonight was fajita salad. I made homemade salsa fresca, homemade guacamole, shredded some cheese and fried up some chicken breast strips for a filling salad.

                            I hope you are enjoying the apples G.
                            I did a BLT today - yes with my own low carb bread. So it was the just like the normal thing. With it I had some egg drop soup with bone broth that I cooked up from the turkey. Nice stuff the bone broth And because we were having the long discussion about what is in Canadian whipping cream I had to whip some cream for dessert.

                              We had tacos Melted the cheese in a saucepan for the shell, and filled with taco-seasoned ground beef, mild salsa sauce and shredded cheese. Haven't had those in a long time!

                                Escarole soup with a few cannelini beans...and I do mean a FEW!!! Best guesstimate for a 5g net carb portion was 2 TBS OR....wait for it...SIX beans!!! They were very tasty though. I picked them out and ate them one by one.

                                Tried my ricotta pie recipe Atkins-style (SF and crustless). It was pretty tasty. Baked it in a 8x8 glass pan instead of a pie plate to make it easier to cut small servings and try freezing some. Put a Silpat in the pan and that made it super easy to get out with no crust. I might try a tiny bit of lemon zest in it next time.

                                Also made my first attempt at Oopsie Panetone. It smelled wonderful. Flavor wasn't bad. Especially with some unsalted butter slathered on it! Still trying to sub for the candied orange peel, golden raisins and chestnuts. Might try some orange zest next time and maybe chopped unsalted mac nuts instead of pignolis. We'll see how it goes. I hope to have it "perfected" for Christmas morning breakfast. I have time still.
