      hey guys,

      Ok so i'm a little green at this. i printed out the PDF file with all the list of foods WHICH IS EXCELLENT cause i prefer to go by Grms that cups. So basically what i have to do is stick to the Veg salad & other veg grms that the book indicates for the induction but eat the veg that are mostly high in carbs.....am I correct?

      Plus here in Malta we have a really good Meditterenean Recipe on how to cook Artichokes.......what we do is we make a filling, made out of Tuna, capers, olives, herbs, salt and pepper.......they also put bread crumbs but i guess you could leave that out.....stuff the artichoke and let them cook with the whole stalk in boiling water......I dont really like artichokes but when my granny cooks them YUMMY!!....i get the recipe from her and post it on.

      looking forward to the challenge as i'm not really a lover of veggies..

        how can i get a small image of my veggie guy.....i tired to make it smaller from my signiture area but it still saves it selve as this bigger image.

          Disclaimer: I am NOT a cook!

          Second disclaimer: Most vegetables are foreign to me.

          So this is what I just did:

          1/2 c zuchinni with skin = 1.1 NC
          1/2 c eggplant with purple skin on = 2.1 NC
          1/4 c spaghetti squash without skin = 2 NC
          Garlic = 0.9 NC

          Some olive oil (no, I didn't measure: 2 tbsp??) and one clove of garlic and the veggies in a frying pan. Wasn't sure if all was ok so added roughly half a tablespoon butter and garlic salt. Plated and sprinkled a little parmesian cheese on it.

          Tasted darn good! Pretty sure I got my fats in for the day. And I think my net carbs from this is 6.1. Sound about right??

          Question: Never had an eggplant before; do you typical remove the skin??

                terry, i don't fix eggplant too often since i am the only one to eat it but when i do eat it, the skin stays on. i've fried it and i've made eggplang lasagna.

                what i am doing as my practice run with this is dividing the least amount of carbs (21) by 3 and trying to get those numbers in throughout my day. 7 in the morning or with my first meal, 7 during my snack time in the afternoon and the rest at my eveing meal.

                  i am so glad you took advantage of the pdf. we had that down for quite sometime and just recently got it back with some needed corrections. good to see you will get use out of it even beyond this challenge.

                  what you will be doing since you are on induction is using the foods listed in the book and using the pdf as a guide to count your numbers. i know at least 3 of us are adding totals in our fitdays. any way you choose is fine.

                  i am sure the articoke lovers are going to want to see that recipe! thanks ahead of time for posting it for us.

                    Well, that's some tough, chewy stuff. I finally just ate the "meat" and threw away the skins.

                    I'll work on that. I just got a load of different vegetables so now I have something to work with. (Once I figure out what to do with the darn things! LOL)

                      I love Eggplant and rarely cook it because no one else eats it. I just slice it, drizzle with olive oil, put on a cookie sheet and roast at like 400- 450 until browned.

                        we're mid week now and there is still plenty of time to get in on this challenge.

                        does the fact that you are shooting for a certain amount of veggies scaring you? veggies can't hurt you! everyone from induction to maintenance could benefit from this.

                        so, i'm standing by, waiting for number 30 to sign up! who's next????
