    I bet you could freeze it and then toast the individual slices. I want to try it too..but what is considered a 'large jicima'? I have seen them from baseball size to the size of baking pumpkins. This is why I weigh everything, lol, instead of using cup measures.

      I already have day 1 planned, food weighed, bagged and in the fridge. And it's already entered the excel sheet my sweet dh made for me. It keeps track of net salad veggie carbs, net other veggie carbs and other general carbs, with a total for each catagory and total for all three together. He didn't even ask why, he just made it.

      Bring on the veggies!

        Is it too late to join in? If not, I would like to. I have moved to maintenance for the time being...so 22-25 net for me. Bring on the veggies!

          Oh... that's a good idea... toasting it. With a little butter melted on it... yummy.

          The ones I usually get are about the size of a softball.

                I'm having some jicama dipped in splenda-sweeted sour cream with breakfast. Sounds weird, but I highly recommend it!

                    I went grocery shopping last night to restock my fridge with lots-o-veggies. Most are all washed, chopped/sliced, and stored....ready to go. I wasn't certain if I could pre-cut the jicama or if it would turn brown & slimy. It's still whole & unwashed.

                      Terry, definitely sounds like you got some that are a little old. They are a very crisp looking white on the inside and slightly sweet. I know the musty smell/taste you mean, and it means it's old. When you're shopping, look for ones that don't have any mold spots. Even at really good stores like Whole Foods or Fresh Market, I still sometimes see them like that. If I do, I usually stay away from the whole batch.

                        Thank you from the bottom of my heart!! With all the fighting I'm doing to regain my health, I certainly don't need major steps backwards because of bad food!

                          Notes on Jicama.

                          If there are dry moldy spots (small ones) on the OUTSIDE they can most times be cut off and be fine. If the spots are wet, then usually the whole jicama is bad. This will happen when the grocers store them in the wet refrigerated sections that get misted.

                          I've had it happen that they look PERFECT on the outside, yet when you get it home and cut into it--it's brown. And it's bad. If the inside is brown, throw it away.

                          Now--with that said. The hunt for great Jicama is always worth it, even if you have to throw a few bad ones away. If you have the opportunity, take the bad ones back to the store (I know they can get pricey--esp if you're buying by the pound and it's a large one).

                          A ripe jicama is the Atkins treat. Slightly sweet, high in fiber...this veggie has replaced fruit for me. I do occasionally eat fruit, but I don't need apple when I can have jicama!!! Yummy.

                          I, personally, don't cook with jicama. I find it never softens. And if i'm going to have a soggy/crunchy cooked jicama--blah! Id just rather have it fresh, crisp, and sweet.

                          It can be cut ahead of time and stored. Though for only a few days. I cut it into sticks and put it in a ziploc bag in the fridge. If you put jicama in the fridge to store, they'll get dehydrated. I store them whole on my counter.
