    The key to getting through a spaghetti squash is a VERY sharp knife and a non slick mat so it doesn't get away from you. They're tough for me too but I bought a new knife and what a difference.



    My menu from yesterday because I didn't get the chance to post it last night----I think I'll probably end up being a day behind because I don't plan my menus, I wing em.

    How's it look?

      I'm happy to report that eating all my veggies yesterday helped me with a whoosh. I was due for one in a long, long, long time. I had stalled between 187-190 lbs for almost a month. I am now down to 184!

        I just squeaked by yesterday - I had 17 net carbs after I rounded up. I got them from pumpkin, cucumber, lettuce and tomatoes. Today I'm having ratatouille for lunch so it should be easier to hit that 17 carbs.


        One thing I'm noticing is that with all the veggies I'm eating, my calories are not where they should be. How are you all getting high enough calories with all of these relatively low cal veggies?

          mary, i don't even worry about my calories. i've always found that if i quit eating when i'm full, eat from the plan, the calories are always fine.

          i can report that already today i've had 28 NVC's.
          i baked my Delicata squash, which was a new treat for me. it is not as sweet as the golden nugget squaxh. sillybud, if i don't check in again today, you've got my total for the day.

            I think im gonna fail today, i'm unplanned and on a double shift at work...

            what is the highest vet carb veggie? ignore pumpkin and jicama and anything else we cant get in this country! maybe i can manage something when i get in

              Emma - I'm not sure what you can and cannot get over there. Do you have bell peppers there? A whole yellow bellpepper has 10 net carbs. The red is similar, and the green ones are a little lower. I often eat bellpeppers... I eat them raw. Just scrape out the seeds and cut into strips. I hope you have them there, because it is so easy and good. Good Luck!

                Heidi - this is how I do it, too. I used to try to cut it in half first and bake it in the oven in a pan of water. Then I read where I could pierce it a few times and microwave it... much, much easier and faster!

                    Tomatoes are fairly high net carbs.

                      checking in from YESTERDAY! (it was nutville around here...) i met my goal for monday. i tried spaghetti squash....and i did not really like it. boo hoo. i was so excited since all of you LOVE it. it just tasted kinda....ummm...i'm not sure. maybe it was the texture. but ernie LOVES it so he is now turned on to a new veggie! so yea for the veggie challenge!

                        Jimmie, thanks for listing those new veggies for us. I'm gonna look for the chayote squash, but I'll wait on the korlorabi thing until you've tried it and report back to us.

                        Emma, that's terrible that you have to work an unplanned double shift. Maybe someone can bring some good veggies to you while you're at work? Rich maybe?

                                Yesterday I got a little over 17 net veggie carbs from:

                                1 avocado
                                1 cup jicama
                                3/4 cup grean beans
                                1 cup celery

                                And I think on the puzzle above, #14 is a jicama.
