    Today is my weigh in day. I am down 1.8 pounds for the challenge. (2.8 pounds for the week.) I was 146.4 pounds this morning, so I am just a few pounds away from my healthy weight range!!! So excited as being healthy is much more important to me than my size.

    Hey, this is off topic, but I thought I would tell you guys that my sister in law is pregnant. She found out this week that it is a little girl. They are going to name her Olivia Caroline. I started working on a baby blanket for her on Friday. The only problem is, since I'm not working this weekend, that's all I've been doing is sewing. I need to set the thing aside long enough to exercise!!!

    Also, I saw this interesting soup on Ciao Italia yesterday. I kind of had one eye on the show (while working on the baby blanket ), so I didn't get the exact amounts used and when I tried to look it up online I couldn't find the recipe --- so I just threw stuff in. It was pretty good. Not my favorite recipe ever, but good for variety. I think it would be really good with spinach instead of zucchini, too. It was very, very quick to make.

    Zucchini, Egg & Cheese Soup
    Zucchini (I used four small ones)
    Shredded Parmesan Cheese
    4 eggs
    4 c. Low Sodium Chicken Broth
    Fresh Basil
    Butter

    Warm up chicken broth in separate container so it doesn't slow cooking when added to rest of ingredients. Saute the zucchini in a little butter until just starting to get tender. Add chicken broth. Heat to simmering. Scramble the eggs and add to soup while stirring. Add fresh basil and allow to wilt. Add parmesan cheese to each individual bowl.

      Ann, congrats on the pounds lost! I'll add it to your tally.

      Also, congrats on the new arrival in the family--hmmm, if your fingers are working, that counts as exercise, right?

      That looks like a great recipe. How big did you cut the zucchini?

        So, I have been 150% good for 7 straight days and have not lost a pound. I'm guessing it will take me until Labor Day to lose these 5 pounds. My motto remains, "Slower is better!"

          You'll probably have a huge whoosh, silly. And yes, slower is better.

          It could be worse--you could be UP 2 pounds like I am! GRRRRRRRRR. It's water, I know that much...it will pass, it will pass... <chanting>

            Thanks, Julie! This is my first biological niece. Actually, the first of the next generation of my family. I have three older brothers, and I am the youngest at 32!!! It was starting to look like there wouldn't be a next generation! My boyfriend has three nieces and a nephew, and since we have been together over 9 years they are like my own, but still...

            I actually just sliced my zucchini into thin medallions, but I think next time I would cut it into half moons.

              It's also harder to lose when you are as skinny as you are already!

                Zucchini Soup with Cheese and Eggs

                Minestra di Zucchine con Cacio Uove

                SERVES 4 TO 6

                This old-fashioned soup with zucchini, cheese, and eggs is served over slices of stale bread. Use small-size zucchini; they are more tender and will cook faster.

                2 tablespoons Colavitaâ„¢ Extra-Virgin Olive Oil
                5 small zucchini, ends trimmed, washed and diced
                4 cups hot chicken broth or water
                Salt and pepper to taste
                2 eggs
                1/3 cup grated Pecorino or Parmigiano-Reggiano cheese
                Small bunch of basil leaves, torn into small pieces

                Heat the olive oil in a soup pot and cook the zucchini until lightly browned. Pour in the broth or water. Season with salt and pepper and cook for 10 minutes.

                Whisk together the eggs and the cheese in a bowl and pour it into the soup. Stir well. Stir in the basil. Serve the soup as is or ladled over fried bread slices.

                  Ann and Tmn -thanks-this soup sounds delicious and I need groceries today so this should help keep it all interesting. I'm usually a throw it in the pot and let's see kind of person- too lazy to get out the recipes a lot of the time-wait-strike that-I'm &quot;creative&quot; !
                  Anyway, it looks like impending skininess for many people!!! Keep up the good work!
                  I just figured out the ticker thing and realize this computer-borrowed from work for the summer-has a camera on it but I'm not sure how to this and am worried I might not be able to delete stuff (which could be embarrassing when I return it). My daughter will be home from camping today. She's a university girl and should be able to help me with the pics.
                  No-t going to weigh myself until Wednesday but I feel thinner. Yesterday I swam some, walked along the lake and did some yard work. This morning we were supposed to have a tennis event that combined breakfast and tennis-'cause it was allcarbs-I did have a cup of coffee but ate at home but then it poured rain so I'll need to do something else for exercise today!

                      So thats 5 pounds lost on the challenge please Julie! if you could add that to your chart!

                                Wow Emma....WAY TO GO! 5 lbs already...sheesh...thats awsome!

                                I will weigh in and measure on Wednesday and hope that I see some sort of a loss.

                                Everyone is doing so GREAT. Congrats to all of you who have already weighed and measured and have seen loses.

                                We can all do this and the motivation to achieve from this group is phenomenal.
