          I sometimes mix it it up with sausage or ham or peppers. I make up big batches in mini muffin tins and keep them in the fridge so when I get the munchies I can pop a couple in the microwave for a few seconds and I can get past my cravings. They are awesome.

            I tried these today with Philly cheese and Tesco cheddar but i burnt them!!

            Has anyone tried making a sweet version of this?

            Did Atkins on and off from Feb 2005 until April 2008. Fluctuated between 15 st 1/211lbs and 11 st 1/155lbs.
            On different weightloss programme from 28th May 2008 start weight 14 st 11/207lbs.
            Current weight 10st 3lbs/143lbs.
            Ultimate Goal Weight 9 st/126lbs.

              Here is my version of quiche muffins.

              This recipe will make 6 "Egg Muffins". They are quiche like in consistency.

              5 well beaten eggs
              1/4 cup cream
              1/8 cup iced water
              6 heaping teaspoons grated cheddar or colby
              1 teaspoon parmesean cheese
              pepper to taste
              Mix together thoroughly.

              Mound no more than an 1 heaping teaspoon of grated cheese in each of six sprayed muffin tins. (Tip: Home grated cheese goes further than pre-grated, packaged cheese.)

              Add crisp bacon or diced ham, sausage, peppers, left over veggies to muffin tins topping cheese. Pour egg mixture over cheese and "toppings".

              Bake at 350 for 15 minutes. Can be refrigerated and warmed up later.

              Basic Recipe: 8 carbs - Add carbs for veggies and other toppings.

                  THose look really good!

                  I tried them but as a vegetarian I don't eat eggs, I thought maybe the egg taste will be lost with all the cheese but it doesn't ...it makes me wanna omit... is there any way I can make it without the eggs? will extra cream make it hard?

                    You could use an egg substitute, but that'll probably still taste like eggs to you. I doubt if it will work with extra cream in place of the eggs, it probably won't set up and end up all liquidy.

                        What is a good substitute for eggs?

                        Ener-G Egg Replacer - follow directions on box.
                        2 tbsp corn starch = 1 egg
                        2 tbsp arrowroot flour = 1 egg
                        2 tbsp potato starch = 1 egg
                        1 heaping tbsp soy powder + 2 tbsp water = 1 egg
                        1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
                        1 banana = 1 egg in cakes.

                              I just made these...I am not a baker but I will let u know....they dont look as brown as the pics tho........I am due for a snack and will try one and refrigerate the others so my hubby can join me for breakfast....I will let you know how they taste....so they dont fall I am letting them sit in the oven for a few more mins

                                I just tried one...very tasty...but not as cheesy as I thought and I weighed the cheese so I used what the recipe called for....would taste good with a tad of salsa and sour cream....well my hubby will taste them for breakfast tomorrow as he is low carbing with me....I take it I just put them in the micro for a few sec to reheat?
