    Everyone's food sounds yummy and gives me lots of ideas...except for the ones that are not in the Induction phase...something to look forward to!
    I had pork tenderloin sauteed with 5 spears asparagus, 1T red pepper, 1T chopped onion and 2 med mushrooms cooked with 1T olive oil...very yummy and filling too!

      Tonight for dinner we had peppercorn ribs with spicy ranch for dipping, caesar salad with homemade dressing (sans croutons) and sauteed garlic broccoli.... it was delish!!! and the best part is, the boyfriend ate what i ate and he didn't even realize he was eating low carb! This WOE is the best!!!

        I made a Pork and Courgette Bake, I used some minced pork which i fried with some onion and garlic and couple teaspoons of sage, then added a can of chopped tomatoes, mushrooms, some Tomato passata, some vegetable bouillion powder, salt, and Pepper then i let simmer in the pan for about 10mins, then i layer half of the mixture in a ovenproof dish, cover with par-boiled courgettes then cover with the remaining mixture then layer the top with more courgettes then cover that with grated mature cheese and loads of black pepper. baked in the oven for 15-20 min then sprinkled with fresh parsley!

        It was gorgeous! i had mine with salad and my kids had a bit of cous cous with theirs, you could also use aubergine instead of the courgettes.

            Skillet-poached salmon with dill-butter sauce (chop fresh dill throw into melted butter) and chilled zucchini soup.

              Im on extended induction so Im having an omelette with mushrooms,cheese,green peppers with mayo and lettuce simple but nice.

                Tonight I'm having a stuffed burger and zucchini chips.

                A stuffed burger is made by sandwiching a filling (sauteed mushrooms, cheese, etc. ) between two raw hamburger patties, smoothing the edges and cooking. The zucchini chips I made by thinly slicing zucchini and putting them in my food dehydrator until crisp.

                        "Ham Pizza" - I use a slice of picnic ham as a "crust", some tomato (or pizza) sauce, mushrooms, peppers, onion, mozzerella & parmesan cheese & italian herb/spice mix It is quick, easy, uses stuff I usually have in the house and my hubby loves it!

                          I haven't posted here in some time so to catch up but in regards to this week:

                          Sunday: filet mignon wrapped in bacon, grilled zuccini, summer squash, and green bell pepper, and a salad

                          Monday: fried chicken thighs (no breading), sauteed green beans with butter, sesame oil, and soy sauce, and a salad

                          Tuesday: roasted lamb, grilled portabello mushrooms, and a salad

                          Wednesday: buffalo wings, steamed broccoli and cauliflower with colby jack cheese melted on top, and a salad

                          My nightly menu is pretty standard in that I always have a meat, a veggie, and a salad.
                          ALL STATS PUT ON HOLD! I AM PREGNANT! AFTER 8 YEARS OF TTC, FAILURE OF FERTILITY TREATMENTS AND MANY OTHER METHODS, I FINALLY CONCEIVED COMPLETELY BY SURPRISE!

                              My old stand by tonight - taco salad. The rest of the family gets regular tacos, but I get a yummy taco salad. I think back to my old way of eating. (weight watchers) I could have had tacos, two maybe, without cheese and certainly no sour cream. Yay, for loaded taco salads!
