Weight to go!!!!! It's THOSE types of decisions that show you ARE serious about this and you should be darn proud of yourself!!

As for me, I had a crazyyyy day/night so I threw together a huge salad with 1/3 cup cucumbers, 1/3 cup tomatoes, 1/3 cup mushrooms and 1 cup of lettuce. It was a monster but I didnt have ANY veggies today so that got in 2 cups. LOL I threw in some cheese, a delicious LC Italian dressing and chicken and I really enjoyed it.

On that note, I did make some cheesecake muffins and sausage egg and cheese muffins so I wont be caught off guard again

                  Beef Stroganoff & Zuchinni Noodles

I adapted this recipe from the one I used BA (Before Atkins)

                  Beef Stroganoff (6 servings)
                  1 oz butter
2 Pounds of ¾ inch Cubed Beef
                  1/4c Onions – Diced (2.8oz)
                  1 tbsp tomato Paste
                  1/4 teaspoon of Garlic Powder
                  1/8 Teaspoons Black Pepper
                  1/8 tsp salt
                  1/4 Tablespoons of Worcestershire Sauce
                  1/2 litre Beef Stock (Hot)
                  2c (6.8oz) Mushrooms
                  1/2 Cup of Sour Cream

Heat butter until it starts to brown. Add beef. Cook until meat browns. Stir occasionally.
Coarsely chop onions. Add with tomato paste to meat. Cook until onions are transparent.
Add garlic powder, salt, pepper, worcestershire sauce and hot beef stock to meat. Cover and simmer until meat is tender (Approximately 1 ½ Hour.)
Add mushrooms. Add more salt, according to taste.
At serving time, bring stroganoff to boiling point. Turn off heat. Now you can either add sour cream to stroganoff, or add sour cream on top of stroganoff.
Serve over zucchini noodles or cauliflower rice.
May be frozen - thaw, bring to a boil, add sour cream & serve.

I had a 3oz steak grilled on Barbecue with some garlic butter
the rest are measured befor cooking
1 cup of mushrooms cooked in butter ( i had 1 cup of salad at lunch jicama, radish and celery)
                      ½ cup of cauliflower
                      ½ cup of rhubarb

I cooked the rhubarb and put a ½ teaspoon of Davinci Vanilla and ¼ teaspoon of stevia in it...Not quite rhubarb pie but it was alright. LOL if I could get the whipping cream to work I would have some of that on it..

Boneless pork chop, jicama "apples", pumpkin & mineral water in a nice wine glass. This is kind of an autumn dish but I felt like it.

Woops, forgot to delete that ingredient - I did skip the worchestershire sauce (Didn't miss it either)

Focus - Zucchinni Noodles: I used a carrot peeler (first time in a long time!!) to 'peel' the zucchinni into strips. I used the whole thing, skin & all. Then I sauteed them in butter for a few minutes until soft. I've served them with meatballs & tomato sauce and with the stroganoff above. I plan to use them as a replacement for pasta in general I'm planning to try them in thin slices in lasgana (at some point) to get a more traditional lasgana (although I really like Linda's spinach lasagne!).
