    The chicken was fantastic! Mom gave me some of the unused Mediterannean herb paste and I swirled it into scrambled eggs this morning----incredibly good.

    Anyhow, I'm going to a birthday party this afternoon. On menu is a whole roast pig, steak, and assorted side dishes. I'm bringing along a green bean salad (so I know I'll have a legal veggie to eat.)

      It is "legal" for Induction if you don't use sake and soy sauce. Soy sauce is a tricky ingredient and it may contain sugars from wheat or sugar, depending on how it was made.

        I had mackerel fillets with a dressing of heavy cream, lime juice and chives (yum! ). For veggies it was baked zucchini.

          Garlic shrimp and my own version of Ratatouille:
          Garlic
          Onion
          Tomato
          Zucchini
          Eggplant
          Mushrooms
          Chicken broth
          Sprinkle of parmesan
          (made enough for 8 servings to spread throughout the week)

          It's beeping that it's ready now!
          First goal: 155

            I didnt use the soy as it has wheat in it and I know I cant eat that.

                  It's one of my favorite salads. I plan to stay at work until later tonight and this recipe is easy enough to be made in the kitchen here.

                          I ended up eating only half of the salad I made and had dessert instead.

                          The dessert was half an avocado covered in a dressing made with mayo, tomato sauce and sour cream (weird combination, I guess...). Anyway, it was very good and "desserty".

                            Cube Steak, Cuban style (Mojo, naranja agria)
                            Salad, spring mix and, I hope I like this 'cause I never tried it and it looks like a "girlie' vegetable, arugula. Tossed in olive oil and vinegar.

                                Arugula is an assertive veggie---especially if you grow it yourself. The stuff in the supermarket is rather watered down, imo. For some reason, it's called Arugula in the US---I guess it's a marketing ploy to make it sound more exotic. In the UK and other parts of Europe it's called rocket or rocquette.

                                I'm trying this out tonight, because I'll be picking some tomatoes from my garden when I get home. Plus I bought a nice chunk of Parmesan cheese over the weekend.
