    Here is what I made for dinner....with veggies on side of course....reposted the recipe below as I posted it in the recipes section too ....

    Okay, I don't know about you but I had this can of chicken in my pantry that is sort of like tuna, but its chicken....I was sick of tuna salad and sick of Chicken salad and the thought of another bowl of it just sent me over the edge and I started experimenting!! giggle~ I believe this is induction friendly and it was very delicious and addicting!

    Sooo here is what I did with my 12.5 oz. can of Tyson Chunk Chicken!!!

    Fried Chicken Patties

    12.5 oz. can Tyson Chunk chicken
    2 Tbsp. Mayonnaise
    1 large egg
    2 Tbsp. shredded cheese of choice
    1/4 cup diced yellow bell pepper (u can use onion)
    pepper to taste
    1 tsp. parsley flakes, dried
    1/2 tsp. Mrs Dash Lemon Pepper
    dash cumin powder
    dash cayenne (optional)
    oil or butter to fry them

    Open can and drain well. Flake chicken in a medium bowl. Add all the ingredients, except oil, and mix well. Heal oil or butter (I did both) in a medium frying pan. Shape the chicken into loose patties and fry until golden on one side and flip to fry other side. Can top with a smidgeon butter after they are done frying if you like.

    Let me know what you think of this recipe if you try it. Oh and if it needs more binding, you can add a bit of flax meal...but don't think it needed it.

      Picked up some fresh lettuce and tomatoes on the way home from the farmer's market and made a BLT Salad with shredded turkey and ranch dressing and water and lemon in my Waterford crystal wine goblet (which I just found cleaning out a closet!!!). My husband thought I was insane.

        You're welcome.

        The original name is "Varză à la Cluj" and the name I wrote above is just a mot à mot translation. As you can guess, "varza" means "cabbage". Cluj is one of the 42 "countries" (in Romanian called "judeţe") of Romania. It's colored red on the map below. I was born in the blue-colored "country", so the recipe was/is very popular around there.

          Top with a few thin slices of tomato and strips of bacon, then cook in the oven (the oven my parents have is ancient and doesn't show the temperature ). If necessary, add half a cup of water to it.

          I'm trying it tonight. I'm a big beef person.

          Question: How long in the oven? Approximately, what temperature? (Can give in Celsius, Fahrenheit or Kelvin...)

              It's about an hour in my mom's oven, but this doesn't really help you, I guess. As I said, the oven my parents have at home is ancient and doesn't show temperatures (it did about a century ago, but the wheel is now broken ).

              It's not difficult to figure out when it's done though... but if you can't, just taste it.

              And if you hear funny noises coming from the oven or it starts to smell as if you're burning down the house, turn off the oven or add some water.

              ETA: When I made this yesterday, I set the temperature at about 200 C. But I don't remember exactly how long it took until it was done.... Something like 45 min...

                Gotta clarify that insalata caprese I'm having....it follows the basic recipe as that link, but I'm having more basil in it (because I have loads of basil growing in my garden right now) and I'm having a shreds of mozzarella to garnish it.

                  Tonight is turkey meatloaf and green beans.

                  The meatloaf is basically a pound of ground turkey, an egg, shredded cheddar, a little grated Parmesan with some chopped onion and bell pepper mixed in.

                    "...insalata caprese..." I used to do that every time that old Chevy of mine blew it's alternator, which happened every other month.

                    1 cup watercress
                    1 cup organic field greens with baby spinach tossed in 3 tablespoon olive oil, i tablespoon vinegar, and a dash of Mrs. Dash
                    5 oz. top chuck, tender, rubbed in Cajun spices, medium-well

                    8 oz. glass of Pomegranate / green ice tea mix, 0 carbs sweetened with Splenda.

                      That happens to me all the time!

                          I had really bad chicken stirfry with onions, water chestnuts, bamboo sprouts, and mushrooms. At least the veggies were good. I always overcook chicken. Anybody have any good chicken marinade suggestions?

                              garlic & chilli stri fry peppers, courgette & spring onion, mixed in with corriander cauliflower rice - served with baked plain salmon fillets -
