    Tonight's dinner is hanger steak (onglet) with caramelized onions, creamed spinach & asparagus.

    I make the creamed spinach by using frozen chopped spinach, cooked and squeezed dry. Then I mix in a dollop of creme fraiche (look for it in the specialty cheese section of the grocery store). Sour cream can be used if you can't find creme fraiche.

          That does look amazing. MMMmmm. I need to make that soon, I just love casserole type things.

              I baked haddock with some dill, onion and cheese and some grilled zuchinni with a tomato and cucumber salad. I love fresh veggies.

                I did an experiment last night: I went to my garden and harvested a medley of things like beans, zucchini, tomatoes, yellow squash, scallions, parsley, basil, and thyme. I diced the zucchini, yellow squash and tomatoes. Then I layered the diced veggies with the beans, scallions, herbs and cheese. And baked it until it was all bubbly and piping hot. It was delicious! I had it with two fried eggs.

                    Yep. I have a container garden on my patio. I grow lettuces, arugula, baby spinach, herbs like basil and thyme scallions(aka bunching onions), strawberries, edible flowers like nasturtiums and this year, a stevia plant. Then I have a 10 x 10 foot kitchen garden, where I grow tomatoes, zucchini, beans, Swiss chard, broccoli raabe, okra. Then I have a permanent herb "fence" consisting of rosemary, sage, dill, parsley, and more basil.

                    That reminds me....I have to start my fall crops this weekend.

                      That's very cool. I own a fairly nice house with a fairly large backyard. The back of my yard sits on the Coral Gables Canal. Pretty good fishing, game that is, but I wouldn't eat anything out of there. Sometimes I see Manatee, tarpon and snook and alligator swimming upstream to spawn. I've caught largemouth and peacock back there as well as gar and bowfin. Occasionally sunfish, oscars and crappie.

                      I used to have key lime, oranges, avocados, mango, papaya, cocnnut, banana, a root called yame, pigeon peas growing on the eastern fence, sugar apple, and grew my own cilantro, peppers, mints, oregano, etc. Hurricanes Katrina and Wilma pretty much decimated my trees and the pine growing in the back part of my yard. They also blew down my two Royal poinciana trees but on of them grew back and is already about 10 feet tall and beginning to flower. I still have a couple of fruit trees left but nothing to boast about. In my front yard, I grow roses and have some small palms.

                      I still have the mint, also, which I make fresh tea from.

                        Mint is indestructible Norman....they're like the cockroaches of the plant world. I have mint. Or rather my neighbor has mint that has decided to move to my property. I don't really cultivate it so I have a tendency to not consider it a plant that I grow.

                        And the more of it I use in tea, lamb dishes, cosmetic preparations, the more it keeps growing.

                          Totally off topic for this thread, but how do you use mint for "cosmetic preparations"? What do you make with/from it?

                            Yup, I'm wondering too. You make your own cosmetics? Cheez, Not2late, you are always full of surprises. I never thought about a mint-lamb recipe.

                              Don't you just love fresh veggie medleys like that?

                              I did a similar thing for breakfast only I made a hash out of the diced veggies (browned them up in a skillet), added some diced andouille sausage, diced shrimp, and beaten eggs (pushed the other stuff to the side of the pan, dumped the eggs in the other side so they could scramble) and then mixed everything together.

                              What made it really unique is that I sprinkled a little curry powder on the mix as it was cooking. Wouldn't think curry would go but it was a fabulous blend of flavors and colors.

                              p.s. I never would have tried curry except it fell out of the cabinet as I was reaching for the garlic powder.

                                Meatballs, tomato sauce (I added Mrs. Dash) and mozza over zuchinni (courgette) noodles sauteed in butter. My husband said 'pretty good diet food' which is a HUGE compliment coming from him
