    Steak, watercress / baby spinach / organic field green salad was what I had for dinner.

      Last night we had Roasted Chicken breast on the bone Cauli Mash and Broccoli.

      First time I have tried the Cauli mash and I have got to say it's really good but you do not need alot of it!

      I prepared the Chicken Tikka reciepe (someone kindly posted here) last night for dinner tonight!

        Little chicken pieces for stir fry only need a couple minutes of cooking (especially if it's chicken breast). I stir fry my meat first, put it on a plate, and then throw the veggies in and stir fry those. When the veggies are pretty much done, add the chicken back in and mix together and finish cooking for about another minute or so.

        Re: marinades. Most commercial ones have sugar in them. Any kind of vinaigrette-type salad dressing (Induction legal) makes a quick & tasty marinade. Also tasty is equal portions of lemon or lime juice, vinegar & oil with some garlic powder. When using lemon or lime juice you don't need to marinate that long...about an hour tops. The reason is that the citrus juice "cooks" the food (see: seviche)

          We are having bbq!! Although the weather is some what bad. It is for my brother leaving, some people are coming over. I have made skewers with chicken, peppers and mushroom on (out of my allowance of course) which will be bbq'd with lettuce.
          But if i'm peckish, there are also chicken legs/breast on the go. Don't wanna go near the burgers and sausages as I do not know whats in them.

            Thanks mizski! I'll try those suggestions.

            I went ahead I threw my other two chicken breasts in the crockpot this morning with some seasoning, green chilis, and chicken stock. I'll shred it up tonight and we'll have big taco salads.

              I don't know, yet. I decided to split for the weekend and have me a mini-holiday. Will keep you posted on what I ate / will eat for dinner tonight and during the weekend.

                I'm going to my mom's for supper tonight. She subscribes to a herb magazine and she's going to try this recipe tonight:

                Anyhow, for the poster who asked if the meal ideas are Induction friendly. They are. That recipe I linked is also Induction Friendly, provided you leave out the carrots and potatoes. See there are plenty of recipes in standard cookbooks, magazines, newspapers that are Induction friendly or can be made induction friendly by substituting or leaving out certain ingredients. For example, in this recipe for flank steak: http://www.herbcompanion.com/cooking...ank-steak.aspx you can substitute the candied ginger slice with a slice of regular, uncandied ginger, to make it Induction friendly.

                So don't be afraid to look at regular cookbooks, the chances are you will find recipes that are completely induction friendly---just keep a copy of the Induction Acceptable Foods list close by when you are looking through the books and magazines.

                  Tonight my husband is still talking about our dinner, we both loved it -
                  Roasted veg in olive oil (broc, peppers, courgette, spring onion, garlic)
                  Baked white fish with a lemon marinade - baked in foil in the oven
                  marinade - garlic, ginger, fresh lemon juice, corriander, olive oil (blended) and added to fish in foil to bake.

                        Haven't eaten chicken in a while. That Herb chicken sounds great.
                        I rented a villa on the Gulf of Mexico tonight and tomorrow, so I'm stuffing myself with fresh, off the boat stone crab this evening. Got my little wooden mallet ready and melted butter.
                        After this beast's feast I'm going to come out walking side-ways.

                          My only reason for asking was some of the recipies I have been seeing have things like nuts in them and other things I thought was outlawed in Atkins... just confused I guess.

                              Last night I made an awesome stirfry...
                              A whole head of cabbage, 1 orange bell pepper, 1 red bell pepper, some jicama cut into thin strips, some green onion, garlic and chicken. I used a cumin, olive oil/butter, dash of soy sauce, red wine vinegar, red pepper flakes (dash), ground ginger and parsley flakes. I know that the seasoning seems odd but it really tasted awesome!

                                Just post the links to the recipes you are not sure about and ask if they are "legal".
