        Cheez...sounds kinda' rated X...

        The closet I've been to Europe, Not2late, is EPCOT. The arugula I had was definitely assertive. It had so much flavor, even a hint of nuttiness. Every try super aged Gouda? Love it.

        Well, for lunch I had a cup rocket and a cup of mixed salad greens tossed in Olive oil and vinegar. I'll probably have the same thing for dinner tonight. Also, I had Atlantic salmon salad. The canned stuff mixed in 2 tablespoons of Mayo.

        I enjoyed that so much, I'm having it again for dinner.

          I'll have endives stuffed with shellfish and topped with Gouda cheese. Some lemon juice will also go somewhere in the mix.

                      Had my main meal for lunch today: Maine crabmeat (similar to Alaskan crabmeat--not blue crab lump) salad made with mayo, chopped celery and a little black pepper served in a nice big fresh off the vine summer tomato. Served this on a small bed of salad greens including but not limited to rocket and frisee.

                      Summer tomatoes are the best!!! Mmmm.

                          Great! Sounds really delicious. When I used to live in NYC, we used to rent a house during the summer on the Long Island sound. We did so much fishing and netting, we feasted on Maine lobster, crab, etc.
                          I had herb and garlic chicken breast and 4 organic, porch raised eggs, soft boiled, so far. I'm still aiming for the salad I brought with me and salmon salad possibly a couple of hours before I go to sleep.

                            Yep, tasty seafood up this way. I'm on Cape Cod (Chatham) so fresh seafood is a way of life here.

                            Speaking of that, tonight's supper is steamed (soft-shell) clams complete with clam broth and butter. These will be my first steamers on Atkins...WITH butter. Yaay! They just weren't the same when I was doing low fat dieting. Those babies need a nice butter bath!

                            Accompanying veggie is 2 bean salad with some red bell pepper strips to replace the missing 3rd bean. Quickie recipe for 2 bean salad is to chill a can of NSA yellow (wax) beans and a can of NSA green beans. Drain. Add some red pepper strips, a little chopped onion and toss with some Italian salad dressing.

                              Steamers! Cherry stone, if my memory serves me well. We used to dig them out on the sound. Here, in Miami, there's also a good array of fresh seafood. When I split to the west coast of FL., I eat stone crab by the ton, fresh off the boats. The grouper here is great, also. Put a shell around it and grab it from the sea, and I'll eat it, no questions asked.

                              This WOE is far more varied, in certain ways, than the low fat thing. I remember losing a heck of a lot of muscle mass when I used to diet down the low fat way. I was always hungry.

                              Back in the late 80's / early 90's when I was at my bodybuilding peak (255 lb., 19 3/4" bicep and 33" waist, I'm 71 inches tall), I could not get the definition and vascularity that Atkins is producing now. I wish I knew about this diet back then. I'm no where as big as I was 20 years ago, but I'm beginning to grow again on a high fat / low carb diet. Many bodybuilders of old followed a version of the Atkins. They would eat a dozen raw eggs whipped in cream as protein shakes. Their staple was steak and eggs with leafy, green vegetables. My stamina and endurance has gone through the roof. I'm doing workouts in half the time, with the same volume and intensity, I did 10 years ago.

                              The sense of well being, the emotional stability without the mood swings are just incredible on this diet. I usually walk for about 65 minutes per day, the first thing in the morning, and I feel like, well, very healthy, assured and so clear minded. As you probably figured out by now, M, is that I'm heavy into quantum chemistry. I'm telling ya, my math skills and memory have improved so much. And I've always been strong in math and physics. Those two subjects were my undergrad minors.

                              Back to steamers and butter, thanks for another great suggestion. There's a local joint here in Miami that sells them by the dozen, etc. as appetizers. This diet can be so creative.

                                Last night I made Sheperds Pie: Layered seasoned ground beef with garlic sauted zucchini, and a nice layer of cauliflower "fauxtatoes" on top with a little melted cheese. It came out of the oven bubbly and fantastic The whole family ate it!

                                And I have to admit I had a small serving for breakfast this morning! I get tired of eggs pretty quick
