    I got me a new fire extinguisher thus I'll attempt blackened, Cajun style cod fillets, the old 'can never fail' Dole green salad mix with olive oil and a dash of vinegar.

    For dessert, I'll have me gallons of fresh, wholesome air, followed by a tall glass of iced, filtered water.

      I was too stuffed with the fennel-onion-sausage thing to even think about dessert!

      The last time I had blackened fish was at Paul Prudhomme's restaurant K-Paul in New Orleans about 10 years ago. I've never tried it at home because 1. my smoke detector is too sensitive and 2. I don't like burnt things because it's the burnt part that's associated with an increased risk of cancer.

        I'm a guy, and I'm lucky to poach eggs without burning down my house
        Wrong attitude to have. Cooking isn't a gender specialized skill. Nor should it be. Cooking leads to eating which is a basic necessity of life. There's no excuse for not being able to cook yourself a nourishing meal.

          By the way, the purpose of this thread is to give folks an idea of what to eat other than the b-o-r-i-n-g steak/chicken, cooked vegetable or salad meal many of us tend to eat. Day in and day out. Everyday for 14 tastebud tedious days.

          Why should your meal be a boring grill steak with unimaginative steamed green beans when it could be a steak au poivre with a mushroom sauce and a faux mashed potato-cheese casserole? Or a poached salmon with a sorrel cream sauce and garlic roasted asparagus?

          That's what this thread is about: to give ideas that dispell Atkins is a boring steak with a boring veggie/salad or worse a mess of eggs and bacon.

            My fish came out great! I left 2 more fillets for tomorrow morning's breakfast. I also tossed in 2 oz of Avocado (Florida type) weighed with the skin into my salad.

            Cheez...not2late, I didn't know that eating is a basic necessity of life, thanks for the info.

            I also splurged and drank about 10 oz of Diet Rite caffeine free cola, the one sweetened with 1',4,6'-Trichlorogalactosucrose, ya know that funny sugar structured thing with the chlorine atoms .

              "...au poivre with a mushroom sauce and a faux mashed potato-cheese casserole...Or a poached salmon with a sorrel cream sauce and garlic roasted asparagus" I can't poach an egg without causing an inferno! Remember?

              Reminds me of Jane Hathaway trying to educate Jethro Bodine. Cheez sometimes reading a moderator's stern post feels like somebody is massaging my hippocampus while wearing a joy buzzer.

                Tonight we fired up the grill and I made grilled scallops and haddock, grilled baby asparagus and red peppers, diced tomatoes and cucumbers with ranch dressing.

                  For me tonite it's roast beef & onions, steamed zuchinni w/ butter, green salad w/ fresh cucumber, tomatoe, black olives, ranch, decaf ice tea w/ stevia.
                  I promise that I wasn't trying to withhold this recipe ... I just never saw the request!

                  Here's the pizza recipe I suggested. Make sure you put all the ingredients you use into a carb calculator like Fitday. I eat about 1/3 of the pizza with a salad and find it satisfying.

                  This recipe was graciously shared by Biker Goddess when I first joined the ADBB. During my early Atkins days, when I had been eating way too many pizzas for way too many years, this recipe helped me kwell the desire for pizza. I don't eat tomato sauce, so I leave out the sauce and it is still positively delicious. My husband and I do not miss pizza anymore.

                  For those concerned about the amount of cheese, I use three glass dishes and spread the ingredients to make three pie shells. They freeze nicely and I always have a shell or two for a quick lunch or dinner.

                  4 oz softened cream cheese
                  4 eggs
                  1/3 cup heavy cream
                  1/4 cup parmesan cheese (grated)
                  1 tbs chives
                  1/2 tsp Italian or pizza seasoning
                  2 cups shredded cheese (I use mozzarella /cheddar mix) 1/2 tsp wet garlic or 1/4 tsp garlic powder
                  1/2 cup lowest carb tomato or pizza sauce
                  1 cup mozzarella cheese
                  Toppings to taste (I use pepperoni, sausage, green olives, whatever!)

                  Beat together cream cheese and eggs till smooth.

                  Add cream, parmesan cheese and spices.

                  I use 2 or 3 - 9 inch round glass pie plates and spray them with oil. (Original recipe calls for a 13 X 9 inch glass dish.)

                  Put 2 cups of shredded cheese over the two or three dishes and pour egg mixture over the cheese. Bake at 375 for 30 minutes.

                  Spread with sauce (if desired) and then add your toppings.

                  Cover with mozzarella cheese.

                  Bake till browning and bubbly.

                  Let stand for 5 minutes or so.

                    Tonight was some hotwings and some slices of avocado and something new that I tried and found that i absolutely loved!!! Diced Jicama, fried with diced yellow bell pepper and diced green onions...sprinkled with salt and pepper...I swear its like crunchy fried potato hashbrowns!! I LOVED IT!!! Make sure to cook the Jicama long enough to take some of that crunch out but man that really made my evening!

                      Last night was calamari with fresh basil and lime, chilled and made into a seafood salad with chopped celery, chopped cucumber and chopped red bell pepper served on a bed of baby lettuce.

                      Very different and very tasty on a hot summer's night. Remember not to overcook the calamari or it will taste like rubber bands.

                        Actually, Grannie's meals of hog jowl and collard greens, fried catfish and ham and red-eye gravy would fit in very nicely with Atkins.

                        And I wouldn't go near your hippocampus, by the way. On the other hand, I would like to tinker with your temporal lobe cortex and amygdala.

                        As I wrote, this thread is supposed to be helpful and give ideas on devising an Atkins menu. I never liked food fights.

                                I had prime rib a couple weeks back but skipped the Au Jus because I have no idea what's in it. That's why I don't post in this thread often...I'm kitchen-challenged! So, Au Jus is induction legal??
