    Last night's dinner was roasted Cornish hen with Cousa squash as a veggie. Cousa squash is a Lebanese summer squash or kusa (cusa) which closely resembles zucchini (courgette) but with a lighter, mottled green skin. For those missing corn, try to find some cousa squash...it is wonderful sliced and boiled or steamed with some butter (and maybe a little salt). It really does taste like corn.

      Cornish hen. I haven't eaten any in quite a long time. Love it. I eaten, so far, just ground chuck, and 3 cups of salad greens: Watercress, arugula and mixed greens tossed in Olive oil and vinegar. I'll be munching on roast beef the rest of the evening as I get hungry.

      I'm not in the mood to conjure up anything different. I just wish I could remove my brain from my skull for a few minutes, dunk it in a bucket of ice cold water and install it back into my cranium. Then: .

        For dinner I had ground sirloin beef ( I like mine over cooked ) with mix veggies ( Red, Green Pepper, Mushrooms, Zucchini, ) Sauteed in butter over top with a bit of mustard pretending it was steak sauce! LOL. Lots of safe spices, and garlic. It was quite yummy!

            I had zucchini spaghetti (julienne zucchini) cooked in a little butter topped with my homemade spaghetti sauce and ground beef - side salad w/hidden valley ranch. It was delicious!

              Roast beef, then steak, then Swiss chard, watercress, arugula and mixed salad greens. The salad was tossed in EVOO and a bit of vinegar. I eat quite a bit of EVOO because I like it's omega 6:9 ration.

                  If I recall correctly V8 has beetroot juice in it so it would be a rung 8 food.

                  However, Dr Atkins did say

                    Yesterday I poached a bunch of chicken parts. The poaching liquid I saved in the freezer and will use as chicken broth for soups, sauces, etc. Tonight I'll shred some of that chicken, mix it in a vinaigrette flavored with tarragon, and served with a variety of raw veggies.

                      Personally, I've always thought V8 tasted like unless you put half a can of tomato puree, a tablespoon of Tabasco sauce and a shot of Absolute in it.
