    Dinner on Saturday was cauliflower pizza.

    Tonight I'll have chicken liver (yes, again... I really like that stuff ) with
    sautéed arugula, mushrooms and red peppers.

      Hmm, tonight we'll be having some baked tilapia filets that I coat with a thin layer of mayo and shredded parm/regiano cheese mix and a little garlic salt (makes a nice little crust). Also I'll be sauteeing some fresh green beans with a little butter and garlic until they are al dente. SO YUM! I'll also be making butter chicken for lunch the next day...the mix I use has no sugar and is only about 2 carbs per serving. 4 if you could the mushrooms I add for veggies.

          Well, since we have no running water with which to clean up after dinner we shall be running to Chipotle for a salad. I love getting their salad, witk their steak (I've checked the marinade!), grilled veggies, little cheese, little sour cream, and a touch of guacamole....closest thing to heaven as I can find on Induction.

            Bummer on the water, Jacqui

            Tonight we had crustless Rainbow Quiche. I made the name up! Basically it's the veg quiche recipe from the Atkins For Life book without the crust. Boy, quiche sure is delicious made the correct way with cream and not skim milk like I had been doing in my low-fat days.

            ETA: Atkins for Life is a great book but is really for Maintenance. ADBB uses DANDR 2002 for Induction & OWL instructions.

              WE HAVE WATER BACK!!!! Oh joy!!!

              Well, since we had NO idea when we'd get water back I didn't take anything out to thaw...so I guess I need to make a stop at the grocery store. Oh, but we have fish leftovers, to tonight is baked Tilapia with a mayo and cheese crust and garlic sauteed green beans! YUM!!!

                tonight is chicken burgers

                Chicken mince
                garlic, salt, pepper
                mixed herbs
                Grated Parmesan to bind

                All mixed together and either fried or grilled. Place a big dollop of mayo on top and then wrap up in a big lettuce leaf and munch down on.

                The lettuce leaf acts like the bun...my boyfriend likes eating them this way as well instead of the bun

                    Years ago, Grandma used to make pickled green tomatoes and they were fantastic. Then, at some point, she decided to change the recipe and add some sugar.

                    My dinner tonight is steamed salmon with thyme and mint, and Jacques Pepin's Pumpkin Gratin: http://www.atkinsdietbulletinboard.c...-friendly.html. That gratin is delicious!

                      It sure is! It's also good for breakfast too.

                      Tonight's dinner is lobster salad with a tarragon mayo on field greens with a couple of grape tomatoes and bacon pieces. I want to eat it NOW!!!

                        I had cauliflower cheese made with JoanOH's Rich Cheese Sauce
                        Rich Cheese Sauce
                        1 oz cream cheese
                        1/4 cup heavy cream
                        1 cup grated sharp cheddar cheese (I used 4 ounces of Red Leicester)
                        1/2 tsp yellow mustard

                        In a small pan on LOW heat, place cream cheese and cream. Stir frequently until cream cheese melts and blends in with cream.
                        Add grated cheddar cheese and stir until cheese melts thoroughly.
                        Add mustard and stir again.
                        If needed, add a bit more cream to make this the "sauce" consistency you want.
                        This is excellent warm as a cheese sauce for everything you ever used a cheese sauce for.
                        HOWEVER, if you have leftovers and put it in an airtight container in the fridge, the next day you have a wonderful CHEESE BUTTER! You can add a pat to the top of a steak or to hot veggies!
                        If you want a spicier cheese sauce, add a few drops of hot sauce, some cumin and chilli powder.
