Wow those clouds sound goooood. I'm having a major love affair with butter these days. My husband keeps finding ways to slip that joke into every situation.
I made these cool tuna patties for dinner that will require some tweaking, but were an awesome change. A can of tuna, a blended egg, some spices (I used cajun, roasted red pepper, onion powder, garlic & sea salt, and pepper), and a spoon of mayo. I used a bit too much mayo, so I had to crush up some pork rinds to bind it a bit. Then I fried them in butter like patties (yup, using that butter!).
They were really good. I would like a bit more of a crust on them though, so I think I might coat them in my Carbquik next time and see if they crisp up a bit. I might put a bit of cream cheese in them next time. I was also thinking this would be really good with crab instead of tuna.
For veggies I had asparagus, French cut green beans, and mushrooms sauted with bacon. All in all a great dinner!
