    Mike, that's great! I try to do most of my cooking for the week on Sundays. I actually need to make some asparagus wraps for DH for his snack tomorrow and Tuesday. I may also make that hamburger casserole you mentioned. The recipe looks good!

      Good Evening all!
      Raging storm tonight..spent most of the day preparing for it..think my family and I are as ready as we can be..

      I have been reading all the posts:
      Just be too much to keep up with right now..so I would like to start fresh!

      Hi! my name is Bill, and my family and I have been doing Atkin's for a little over 100 days now..We have (at any given time) been on this board since day 1 of our decision to follow this WOL..We learned a lot here and have had the pleasure of meeting some amazing people on this board..as well as learning alot about ourselves and how this WOE effects each of us differently.
      I am a "by the book" type of guy...meaning I have read our book and just about everything published by Dr A in the last 10 years leading up to his sad accident.
      My approach to this WOL?.... In it's simplest form: Eat right, Take my suppliments and workout.
      The eat right part? I have learned how to buy the freshest Veggie's and proteins available. I have learned to cook this bounty in 100's of way's.
      Not having the same meal twice in one week really helped my family stay on plan and treat every meal as a new adventure.
      The suppliment part? I now see that Dr A's statement that there are not enough nutrients left in the very soil we grow our veggie's in--is now scientifically excepted. So I take multi-vitamins, Omega fats and some form of fiber everyday.
      The workout part? I do know it was a big deal to Dr A that we try to find an excercise plan to burn at least 1000 calories a week...easier said then done!! after 9 years of pretty much a stagnant lifestyle..this was my greatest challenge. But, slooooooooooowly and steady..I just kept at it..
      till I am at a much better point then I started...

      So ...I would like to be interactive...share in our journey so far and share in your journey so far too!

        Caramella - what's an asparagus wrap? I love asparagus.

        Bill - glad to have you back, er.. meet you! I'm definitely going to turn to you for food ideas.

        Tried an oopsie roll microwaved with a bit of butter on top, added sugar free syrup - tasted exactly like a pancake!

          Mike - I make these roll-ups for him. It's asparagus wrapped in salami and roasted in the oven. Sometimes I make them with a cream cheese spread or just sprinkle some Parmesan or Pecorino cheese on them before going in the oven.

          Oh and I made that hamburger-broccoli alfredo casserole! DH absolutely loved it. I had to smack his hand to him away from the pan.

            my scale said 273 again this morning so i am going with it.... surpassed my first mini goal of 275 yay me ! i truly cant believe how easy this WOE is... i mean there are moments when i want chips, (my only true downfall) however.. so far so good.. its been relatively easy, no hunger, and the scale does move.. wow.. amazing

            keep up the good work everyone... and happy monday !

              Sugar - YAY for making your mini goal!!! If you ever want chips, try making some cheese crisps in your microwave. It's really simple to do. I got the recipe from Linda's low carb site.

              I made these with Fontina cheese last week. They were so good and a great alternative to chips!

                Sugar...yes lots of veggie ideas posted in that thread. Now getting the plan implemented. Weight to go on getting past your first mini goal!!!! And great find on the dress. I love a great deal.


                Bill nice to meet you! Looking forward to interacting with you! LOL! BTW...did you know you have the nicest wife?? Hope the storm by passes you...you just got cleaned up from the last one!

                Mike...yah for you for getting to the oopsie rolls. Did you know you can freeze them? Just in case you want to do a big batch..I tend to go through mine fast when I make them.

                Caramella...I need to do a bulk cooking day. Ideally would like to find meals that my 10 & 12 year old would eat that I just have to add a side to. I was working towards that with regular recipes before I started Atkins in June. The plan was to get like 40ish dishes everyone liked and rotate them. Then I started Atkins and summer came along and now it is time to try again but with more Atkins friendly recipes.

                All right...confession time...Big slip this weekend. Let's just say there was bee's and extracting and fresh honey from the spigot and a spoon involved. Which led to a bite of this and a smidge of that and a bowl of cereal before bed. I feel like CACA this morning...tired...dragged out...tummy upset. I know that the cheats had to do a little with me starting to feel overwhelmed with stuff that needs to get done and I was working towards fixing that by requesting some recipe ideas last week. And some was letting me talk myself into it. So sad.

                  Elsie - DH and I have a cooking blog. It's rather fun. Mostly I post on it, but DH shares his opinions and some recipes as well. Now, we're on Atkins, we post recipes we like or that we've created on our own. We're always looking for something new. We also throw in some non-Atkins recipes, since I do a lot of baking on the side for friends and relatives.

                  For instance, I tried a Cincinnati Chili recipe yesterday that was low carb and tasted delicious. I posted that along with a polenta and ricotta cake with figs that I made for my aunt, since we couldn't enjoy it ourselves.

                    Oh and don't feel bad about the slip-up over the weekend. It's a new week. Just act like it never happened. That's something I learned from DH, especially after our big cheat on his birthday.

                      finally came out for a peek this A.M.

                      We made a veggie pizza last nite..and a shrimp scampi sort of thing...

                      We do miss chips too--and deep fry Zuchinni, beets, green beans and
                      some other's to get by..Truth be told---We tossed just about everything into the fryer at one time or another just to "test" it out...ACK! some of it was just a horrid mess!

                        Good morning everyone.

                        I wanna be like MIKE! I never got my darn oopsie rolls done. Maybe I can get them done on Wed. this week. That is my one down day. I had such good intentions too. I did make the broc/califlower, hamburger dish though. It was awesome! I just use a mix of frozen broc/cali in the dish so it is a little more colorful. It all tastes the same by the way. Yummy! As for the water, I invisioned the same thing you did... there is just no way! Smile - I am shooting for like 85 oz. a day and I feel like a fish already.

                        Sugar- I need to take you shopping with me. I went shopping on Sat. feeling so much lighter about myself and all. But sadly I came home with nothing. Either it did not fit or it just looked dumb on me. I hate shopping. Not to mention here in Fargo if you are a larger size you have to go up the escaltor to find your clothes. You cant stay on the main floor with everyone else or anything. Not all stores are like this but I really like shopping at JC Pennys and that is how they do it.
                        By the way I wanted to give you a big pat on the back... Yeah for dropping some lbs. way to go. Keep up the good work. You made one of your goals and I think that is awesome. Hopefully I can follow suit soon.

                        Bill- I know we have not had words, but I am glad to see that you are back on the boards. Welcome.

                        Robin- Did you pick out your welcome mat? I am glad that you found some place to hang your hat.

                        Elsie- you and I were both the same this weekend. Cereal, who bought the cookie crisp in the first place? Good thing I ran out of milk or I would have had three bowls. I am back on track this morning. So, lets just move on - shall we?

                        Carmella- I might just have to try these asparagus rolls of yours. They sound quite good. I am game for almost anything you can throw at me.

                        This is my week to start excercising. I have not added this in to my new wol but today is the day. Today is day 14 of induction & I should be over the up and down roller coaster + tom should be taking off shortly. I have a feeling a big woosh is headed my way. I cant wait. I am going to shopping for my new scale & I will take your advice Elsie and buy the old time scale.

                          Bill...then go ahead...share the links....I know the ones on Cleo's site are very inspiring!

                          Shauna...I am sure there are people here who love their digital scales. I thought I would. I mean...gee...then I get to see the every ounce go down..right? Ha..flip side is you get to see every ounce go up too sometimes. And like I said..I would get many different readings from mine. And I am not talking ounces...but up to 3-5 pounds just stepping off and back on. I have heard that Tatallia (spelling?) is a good brand though. To each their own. More important to take your measurements though. There are lots of times on this WOE that the scale doesn't move but the inches do. Since you are starting your exercising you may experience that next weigh in. Don't panic.

                          Pork chops for dinner tonight. Gonna try Crusted Pork Chops * FYI it is induction friendly as well. Will just leave off the onion on the kids. No..actually I won't. They can take it off themselves. Yeah...that is what I will do. (Bill...no I am not putting onions on the kids...I meant I will leave the onion off the porkchops I am making for the kids...LOL)

                            Elsie - I'm definitely going to have to make bigger batches of oopsie rolls and freeze them. Had "pancakes" and sausage this morning, so I'm going through them fast.

                            I can see where fresh honey could lead to a slip up. You've helped me get back on track more than once, so here, take my hand and get back on this wagon!

                            Caramella - the wraps sound really good. Do you use fresh asparagus? At this time of year, fresh asparagus costs more than a gallon of gas - I was wondering of canned or frozen works as well. (Do they even have frozen asparagus? I don't think I've ever seen it).

                              Mike, I use fresh asparagus, but I don't see why you wouldn't use frozen or canned spears. I have a recipe for it with the cream cheese spread I made, but you can leave off the spread and just top it with a drizzle of olive oil and Parmesan or Pecorino Romano cheese.

                                Mike...I actually haven't tried the OOpsie rolls. I made the revolution rolls. They have a less cheese in them leaving me more cheese to use else where throughout my day.

                                As far as canned asparagus...my DD and I tried that this year and definately did not like them...too mushy!!!
