      Here's another good veggie bumper upper: 1 medium Artichoke = 13 carbs

      I've been missing artichokes for many years now. I'm too neurotic to eat them. I'll be having a few next week for sure as they are in season and the astronomic prices have come down!

      Any other Artichoke lovers out there?

          I cut off about the top 1/3 of it, trim off the thick outer layers. I put them upside down in a steamer for about 20-30 minutes.

          Or, you can boil them as well (prep would be the same). BUT, when boiled, if you don't pull 'em out at the exact time they seize up and get tough again. Test after 20 min.

          The test is pull off a leaf, if it pulls right off and a knife slides thru the heart easy, it's done!

            This sounds like such a Great Challenge.... but I'm going to be out of town camping from the 26th to the 4th of May. I'll be with you guys in spirit!

              this the the third different boardwide challenge we have done and the others were successful so i think we can figure this to be a repeat.

                Oh yes I'm an artichoke lover too! I cook them the Italian way, which is a lot of work but worth it in the end. They never cook them the French way (boiling and eating the base of the leaves and the heart)... rather, here they throw away about 80% of the leaves, cutting off the pointy tips and leaving only the white inside part (you have to be careful there isn't any furry stuff inside and it there is, remove)... then they cook then in many ways. I did some yesterday.
                After preparing as above, I diced them into tiny bits and cooked in a "soffritto" (of garlic, onion and chili pepper tossed in oil) with a bit of wine, wild garden mint and a tiny dash of vinegar. If you melt a cheese slice in these, it's good too. A wonderful side veggie.
                If you have leftovers they're great in a souffle or frittata.

                        I've never had an artichoke before, mostly because I wasn't certain how to eat one or how to fix it. Maybe I'll give it a try for this challenge, but you lost me on furry stuff. Is it prone to mold??

                          I tried to prepare artichokes on Sunday and ended up having to throw them out. I don't get how you make them...but that's another thread for another day, I suppose!

                              Steam them. As in, fill pot with a couple inches of water, stick in artichokes, cover pot.... I forget how long you wait though...

                                I'm an OWL'er and would like to be in. Getting the recommended amount of veggie carbs has been a challenge for me so I'm excited to have the motivation.
