    And too, I forgot about using cucumbers as another way to get blue cheese dressing (homemade, of course) to my mouth. So I will shoot for getting 8 to 9 grams of NVC (net veggie carbs) from the 'salad list' and 5 to 6 NVC from the 'other list'.

    And another thing I just thought of...salsa...since peppers are on the salad list and I make my jalapeno salsa with mostly peppers..that will count for salad veggies too!

    Stuffed portabellas and cauliflower w/ cheese..oh yeah, life is good here in veggieland.

      That's been my biggest hitch in all this; the two catagories of veggies and how limited we are in the other vegetables.

      I have a jicama here but am worried about it being ok. It had some mold on the outside which I cut off and am ok with. But there was one very soft, yicky spot from the surface in. I saw a posting from someone else to throw it all away if there's "watery" mold (?). Not sure if that spot qualifies; the rest of it seems ok but this is the first time I've bought one.

        it's great to see you guys sitting back and working with this.

        this is friday and many people don't get on the board during the weekend so let this serve as a reminder that the challenge starts on Monday! some of you might be on Monday before some of the rest of us but come Monday, wherever you are, the challenge starts then!

            Hello, Everyone...

            Well, I've put off joining the challenge until I played with net veggie totals this week. It will definitely take a concentrated effort, but I am IN. (OWL)

            I have observed that it is hardest to get them all in on the days that I work. Thankfully, I only work part-time and next week is a light week for me there. Yesterday I worked and only got in 13 net veggie carbs. I am in OWL, so that's not going to cut it. I don't work today, and have already gotten in 8 net veggie carbs by 10:30am, so I think that I will be good today.

            My normal weigh-day is Sunday anyway (I started this WOE on a Sunday and only weigh once a week), and I am very curious to see how this challenge affects my losses during the week of the callenge. I am currently plugging through week 8, and my weigh-ins look like this:

            Week 1 - 5 pound loss
            Week 2 - 2 pound loss (TOM was in town)
            Week 3 - 4 pound loss
            Week 4 - no loss
            Week 5 - 1 pound loss
            Week 6 - 1 pound loss
            Week 7 - 1 pound loss

            Since it appears that I have developed a "rhythm" of 1 pound a week losses now, I want to see what kind of effect the increased veggies have on me. Don't get me wrong - if I continued to only lose 1 pound a week till I am at goal, I would be one happy camper. But it will be interesting to see how this little experiment goes. And for those of you who are willing to report your own results with respect to how this affects your losses during this week, I would absolutely love to hear them.

              glad to have you joining us mitzi! i'll get you added to the sheet i have. if i've counted right, you are peep #34.

              i've been eating more veggies than ever during this week and most days now, i'm going over that 22 to 25 net carbs for maintenance. today i am adding something that i like but rarely have and that's tomato juice. i could have added it long ago but just never did. 8 oz of tomato juice will net me 8 grams of carbs. this i can live with. i look forward to seeing how each one of you get through the week.

                Hi, hope I can still join. Have been watching this thread with a mixture of interest and fear! I am now going to commit to this, although I can see it will take some careful planning.

                I have noticed how over the weeks I have been gradually replacing some of those veggies I had in Induction with carbs from other sources. I still eat lots of veggies –more than I ever did, but am not taking advantage of the higher carb veggies now that I am on a higher limit.

                So I am looking forward to eating 17-20 net carbs worth a day.

                This is going to be so healthy and I can try some new veggies too.

                Anyone know where we can get this Jicama veg in the UK? We don't seem to have it over here and it sounds so nice! Think it is also called Yam bean? Perhaps I will have to try the Asian grocery stores.

                  yes, there is still time to join! welcome to the challenge, tillymum! i'm glad to see you were watching and pondering about this challenge. many are finding that indeed they will have to do some planning.

                  i can't answer the question of jicama in the UK but i'll make sure one of our UK members stops by to fill you in. we'll get you an answer.

                    I am afraid I havent been able to find it in UK yet, Tillymum. When I first heard raves about it on ADBB I visited all the Asian-type shops I could find, but to no avail.

                    I did find an importer's website mentioning it but even after phoning them to ask about it they couldnt say when they had ever bought it into UK and seem to have no plans on getting it at present.

                    If you do find a source I am sure many UK members would be interested in getting some too!

                      I think you're right about it being called a yam bean. Here's what I found:

                      Jicama

                      Jicama belongs to the legume or bean family (Fabaceae). It is a popular dietary staple in Latin America and widely grown in Mexico and Central America. There are many names for Jicama including: the Mexican potato, Mexican yam bean, ahipa, saa got, Chinese turnip, lo bok, and the Chinese potato.

                      Jicama looks similar to a turnip or a large radish, and it can be used as an alternative to the water chestnut. Its skin is thin and can be gray, tan, or brown in color. Additionally, it has a short root and contains white flesh. The skin is typically peeled before eating it raw. Raw jicama tastes similar to a pear or apple. It also does not discolor when exposed to the open air for awhile. Because of this, raw jicama is often used as an accompaniment to raw vegetable platters. When jicama is used in cooking it tends to take on the flavors of the ingredients that it is being combined with. Therefore, jicama is a nice complement to various stir-fry dishes because it blends well with many vegetables and seasonings.

                      Jicama is a very versatile vegetable that contains a high amount of vitamin C, is low in sodium, and has no fat. One adult serving of jicama, which is equal to approximately 1 cup of cubed jicama or 120 grams, also contains only 45 calories.

                      Jicama is available year-round. When purchasing jicama, select tubers that are firm and have dry roots. Make sure that the jicama has an unblemished skin and that is not bruised. Once purchased, store jicama for up to two weeks in a plastic bag in your refrigerator.

                        for all those on induction out there...don't forget about spaghetti squash- we can have 1 cup a day and when cooked with salt and margerine or butter it's 8g net carbs! I totally love this type of squash and I can't believe I haven't eaten it yet!

                        Don't forget about the higher carb veg like pumpkin; brussels sprouts and turnips- big bang for your carbo buck and they taste good all dressed up- except the brussels sprouts...it's hard to dress up something that smells like a fart.

                        leeks and onion are a good boost too- use as a garnish for salads sauteed with garlic....mmmmmm

                          i have a little chart made up with each of our names on it and the days of the challenge.
                          if you all want to report your daily numbers, i'd be glad to post them on the chart and make that available to you each day.

                            Thank you Jimmie, Elizellen and Dream for your help on Jicama. It does look as though I won’t be able to get it in the UK. Guess I will just have to try some other veggies instead. This warmer weather we’ve been having here is making storing veg quite tricky. And my fridge is stuffed to the gunwhales with everything else!

                            More frequent trips to the farm shop I reckon….

                            By the way, on the subject of eggplant, which we call aubergine (which I think sounds much nicer!), I made a ‘lasagne’ last weekend, using it instead of pasta, as someone else mentioned. It is very nice, but does go a bit mushy, so not quite the same texture as pasta, but the taste is the same. We finished the last portion from the freezer last night – yum.

                              That sounds really good- I'm lucky I live with a chef who can whip that up for me! I'm good at making eggs and salad!

                                hey,

                                My hubby is also a head chef and has been very supportive of my WOE. Sometimes my salads are really boring cause i only enjoy the veggies i like, but when hubby does it for me its a work of art...very tasty and plated for a queen..LOL He's helping me in this challenge and is very happy in seeing me eat other veggies than my usual iceberg lettuce which i really love.
