    mitzi, i know some others will offer some really great recipes but something simple to do is cut the squash in half and clean up the inside a bit. put a couple pats of real butter in the cavity, wrap in foil and bake till the meat of the squash is tender.

      patty, i notice differences all the time between fitday and the labels. i go by the labels if i can. a bit more work as i have to add new custom foods to my fitday but most everything i eat now, is loaded as a custom food.

          You can also cut the squash in half, place cut side down on cookie sheet lined with foil. Bake 350 degrees for about 30 to 45 minutes. Let cool! Take a spoon and scoop the seeds out, then take a fork and pull the flesh out, it will seperate into strands, just like spaghetti. And you can use it like spaghetti, mix it with some steamed veggies, broccoli, green and red pepper slivers, mushrooms etc, whatever you like..then you could add some garlic butter sauce or some low carb alfredo sauce. You could do a spaghetti sauce, but those tomatoes add up quick.

          Somewhere I have a recipe that you can use ss in and it makes a cinnamony sort of custard/pudding. I also have a recipe for spinach flatbread that I use spaghetti squash in...it's from that evil other diet I was on for so long, lol.

          You can pretty much do anything with it, it will absorb the flavor of whatever you combine it with.

            heh heh! First time for you, too. Isn't this FUN?!!

            I treated it the same way a friend told me how to deal with butternut squash. Wasn't sure if it'd work but it did!

            Cut it in half and scoop out the seeds and goo in the middle. Place it on a plate cut-side down, and add a little puddle of water to the plate. Cover with saran wrap and nuke it for 10 minutes. IT WILL BE VERY HOT - GET YOUR MITS OR HEAVY TOWEL OUT TO REMOVE THE PLATE FROM THE MICROWAVE! Remove the wrap, turn it over and scoop out the meat which will be stringy like noodles.

            It's really funky stuff! The stringiness is nice and juicy. It's tasty without adding anything to it. I let it cool down a bit, packed in a half a cup's worth, and used that as my "lettuce" for my taco salad. It was really good!! Thankfully, they store well when still whole because I have two more. But there's still enough for another supper or two from this one so I'm not going to cut the others yet. Just stuck them in the cupboard for later. I'm going to freeze 1/2 a cup's worth and see how well it takes that.

              Oh, YUMMMMIIIIIIEEEEEE!!! Those sound good!!!

              And we're going to lose weight doing this, right??!! LOL!!!!

                    Jimmie, do you have a deadline time each day for reporting? I have no idea what I will be eating each day until I eat it. So far today all I have had in the way of veggies is a whole Haas avocado which until now thought was way higher in carbs than it actually is.
                    I will report for the day after dinner this evening if that is okay

                      Ok... this is definitely harder than I thought it would be. Making sure I have my veggie carbs high enough is causing me to tweak the other things I eat to make sure the overall carbs aren't too high.


                      Veggies for Monday

                      B- onion 1/4 c, green pepper 1/2 c
                      L- salsa 2 Tbsp
                      D- cauliflower 1/2 c, spinach 2 c
                      S- pumpkin 3/4 c

                      28 - 10 = 18 net veggie carbs

                        no deadline, atkid. that's perfectly fine. some won't report at all. what would be helpful though is when/if posting your numbers, you state the date and then the number of net carbs. that will help me and be easy to get the numbers on the chart.

                        in the mornings, first thing, i'll post a chart for everyone and leave the link .... oh lets say i put it in my signature. that way it won't get lost in the thread.

                          SS sort of custardy stuff

                          2-3 cups cooked spaghetti squash (end consistancy will vary with the amount of squash used)
                          2 eggs
                          1/3 cup whey protein powder/concentrate (I use bobs red mill, about 1 carb per 1/4 cup)
                          Sweetner to taste
                          Cinnamon/Allspice/Cloves to taste ( I use 2 T of cinnamon and a dash of cloves..pumpkin pie spice is good too)
                          2 T. heavy cream
                          1 t vanila

                          Put everything EXCEPT the whey in a blender and whirl it around till its like a thick batter, then add the whey powder. Blend. You can them pour into a 9x7 baking dish (sprayed with Pam) or individual baking cups. Bake for about 30 minutes or so at 350 or until it's firm.

                          You can easily cut the recipe in half and it's good hot or cold. A little (very little) di vinci sugar free syrup on top is good too, carmel being my particular favorite.

                          I have also made this with zucchini, steamed until tender, then just procede as above.

                              Net Salad Veggie Carbs- 8.3
                              Net Other Veggie Carbs- 4.5
                              Total Net Veggie Carbs for the day - 12.8

                              Other Carbs - 4.7

                              Total Carbs for the day - 17.5
